When it comes to baking breads and rolls, I’m not exactly a baker. Give me a cake, you got it. Want a Souffle? No problem. But a loaf of bread – sometimes it’s perfect, other times it’s not. I don’t know why baking bread is such a challenge for me, it just is.
That is until I tried this recipe. At four in the afternoon, I decided to bake my own dinner rolls. Hubby and Kiddo would be walking through the door in an hour. No problem. The recipe said “quick”. Let me tell you, I was nervous. Have you lost your mind? Baking rolls for dinner – really?
Kiddo is like me, an absolute bread fiend. When we go out to a steakhouse or Italian joint that gives you warm rolls while you wait for the main event, we will eat them by the basket full. This recipe has to be the easiest I’ve tried yet.
And that got me to thinking – I could make hamburger buns or sandwich rolls simply by changing the shape and size of the rolls. A little smaller for sliders, a little bigger for burgers, a little longer for subs. So soft and warm and good. Yeah, I think I finally got this!
Quick Dinner Rolls
1 cup plus 2 tablespoons Warm Water
2 tablespoons Active Dry Yeast
2 teaspoons Sugar
1/3 cup Vegetable Oil
1/4 cup Honey
1 1/2 teaspoons Kosher Salt
3 1/2 cups Bread Flour
Measure 1 cup water in a glass measuring cup. Add 2 additional tablespoons of water to the glass. Heat in the microwave to 110 degrees, about 30 seconds depending upon microwave.
In the bowl of a stand-up mixer, combine the water, yeast, sugar and oil. Mix with a paddle attachment, then allow it to rest for 15 minutes.
While the yeast mixture rests, spray a 9-inch by 13-inch rimmed baking sheet with cooking spray. Line with parchment paper, then lightly spray the paper and set aside.
Once the yeast has proofed, switch to the dough hook to mix in the honey, salt, egg and flour.
Knead with hook until well incorporated and dough is soft and smooth. This will only take a few minutes.
Form dough into 12 balls and place on the prepared baking sheet. Cover with a clean kitchen towel and allow to rest for 15 minutes.
Heat oven to 400 degrees. Uncover the rolls, bake for 10 minutes or until golden brown.
Serve and enjoy.
