Too Cute to Pass Up

When I saw this adorable Brownie creations from the Betty Crocker Kitchens, I knew I had to share. It was just too cute. And it reminded me of my childhood. Just a little something to think about for tomorrow.

My Dad was so creative. Every year for Easter he would bake an Easter-Themed Cake. Some years it was a rabbit, other times an Easter Basket and still others were Egg-shaped creations. He inspired me. When Kiddo was a Kiddo, we baked Easter Basket Cupcakes for his school’s bake sale. I’ve made those same cupcakes for my sister’s children. Easter is such a magical moment for little ones.

This is for all those American Families with more Peeps and Easter Candies then they know what to do with. Let the kids pitch in. You bake the brownie, then let them go to town with the candied decorations. Some of the most creative cakes I’ve seen were decorated by children.

Easter Brownies
1 box Triple Chunk Chocolate Brownie Mix
3 tablespoons Water
1/2 cup Vegetable Oil
2 Eggs
1 cup Creamy Vanilla Frosting
Classic Green Gel Food Coloring as needed
16 Peeps Marshmallow Chicks
Pastel-Colored Cake Sprinkle Mix, as desired
Assorted Easter Candies as desired

Heat oven to 325-degrees for dark or nonstick pan. Line a 9-inch square pan with foil, allowing foil to hang over the edges of the pan for easy lift.

Spray the bottom and sides of the foil-lined pan with cooking spray, set aside.

In a mixing bowl, stir together the Brownie Mix, water, oil and eggs. Spread the brownie batter into the prepared pan.

Bake for 28 minutes in the heated oven or until toothpick inserted 2-inches from the side of the pan comes out almost clean.

Remove from oven, let cool completely, about 90 minutes.

Using foil to lift, remove brownie from the pan. Carefully peel away foil and place brownie on a serving platter or square cake board.

In a small bowl, mix frosting and food coloring to desired shade of grassy green. Spoon frosting into a piping bag fitted with a grass tip. Pipe grass onto the brownie.

Note: To get a grass effect without the use of a decorating bag, spread frosting onto brownies. Using tines of fork, pull up on frosting to get a grass look.

Top with 5 of the Peep Chicks, spaced randomly across the top of the brownie. Add sprinkles and candies as desired.

To serve, cut the brownie into 4 rows by 4 rows. Add remaining Peep Chicks to each brownie square so that each serving includes a marshmallow chick.
