In our house, this year’s Super Bowl is sort of up in the air. Hubby was so disappointed in the Packer loss after coming so far. He’s not even sure he wants to watch the game since the outcome holds no interest. And then there’s all the political nonsense that has somehow seeped into every aspect of life in America, including sports.

Bean and Chorizo Taquitos

There are dishes that come out of my kitchen that my guys let me know that I have managed to serve up what they consider to be a good meal. Then there are foods that come out of my kitchen and my guys let me know they really, truly enjoyed what they ate. Generally, when this happens I hear “you can make this again.” It is their way of letting me know having the same food twice is just fine by them. I strive to create a different meal every night. While some things are repeated such as mashed potatoes or a salad, the evening’s entrée changes nightly. (By entrée, I am referring to the main dish). My guys were in luck. The Taquitos I served up for Taco Mixer Tuesday were a dress rehearsal for Cinco de Mayo appetizer. So yeah, I’ll serve them up again tomorrow.

Taquitos in a Spicy Chorizo-Alfredo Sauce

Have you ever made something without fully understanding what possessed you to come up with it in the first place? This is one of those “what the heck” recipes that my family adores!  It’s so quick, so easy and yet so packed with flavor. Perfect for a busy night or when you what something that tastes good without a lot of work. The recipe is three ingredients. That’s it. The steps are only three – brown, mix, bake.
