Cheater’s Biscuits and Gravy

One Mother’s Day a few years back, my youngest sister and I decided to host a Country Brunch at the family farm. I had prepared a menu fitting a farm table, with a few “fancy” extras such as Blueberry Mimosa served in Lime Sugared Rim Champagne Glasses and a Chocolate Chip Pancake Casserole.

My sister and I divided up the various dishes based on skill and abilities. The more complicated dishes were my responsibility, the simpler ones were hers. Now you might be asking right about now why my sister and I don’t have the same skills in the kitchen. My youngest sister, in my heart, is just as much a sister as the rest of my sisters. However; she is from her mother’s first marriage, and we (my other sisters and I) are from our father’s first marriage. A year after Mom’s passing, Dad remarried and my youngest sister joined our family.

Our new sister was an only child, raised primarily in a single parent household. As a working parent, her mother didn’t have the time nor energy to guide her daughter in the finer arts of cooking and entertaining.

My sisters and I were fortunate to have a stay-at-home hostess of a mother and a natural-born awesome chef for a father. Ours was a home that frequently hosted parties and backyard barbecues. Cooking and entertaining were family-affairs. Everyone chipped in and had a part to play. So it all comes down to exposure. The more children are exposed to life, the more skills they naturally develop. It’s that simple.

My little sister was nervous about making Biscuits and Gravy for the first time. It’s one thing to make something for the first time for your immediate family, in the familiar surrounds of your own home. It’s another to make it for a special occasion such as a Mother’s Day Brunch.  Have no fear – a little “cheating” and a little doctoring will produce awesome Biscuits and Gravy every time.

Cheaters Biscuits and Gravy
6-8 Pillsbury Buttermilk Biscuits (frozen section – DO NOT use canned)
1/2 lb Breakfast Sausage (Jimmy Dean regular)
1 Package Breakfast Gravy Mix (Jimmy Dean)
1 Cup Milk
Salt and pepper to taste

Bake biscuits according to package.

While biscuits are baking, crumble and brown the sausage in a skillet until cooked through.  Drain pan of excess grease.

Sprinkle sausage with gravy mix. Add milk and mix well, blending everything together. Season with salt & pepper to taste. Simmer on low until desired consistency is reached. (Note, if gravy thickens too quickly before the biscuits are ready, thin the gravy by adding more milk, a little at a time).

Remove biscuits from oven, split open and cover with gravy.
