I have heard of dump cakes. This is the first time I’ve heard of dump soup. It reminded me a lot of my Five Easy Steps to Italian Chicken Soup, only much easier. All it takes is a can opener, a stove and a pot (or a microwave and a big bowl). This is a soup you could make while camping. Teenagers could make this soup. Even college kids with a microwave in their dorm could manage a nice bowl of soup.
You bet this made it on my menu following the insanity of the holidays. When I told my guys we were making Dump Soup, the off-colored jokes could not stop. That is until they tried it. Perfect for a cold, lazy day.
You know me, I had to play around just a bit. The original recipe was for five different cans opened and dumped into a pot. I added a sixth – a can of V-8 Vegetable Juice. It gave the soup more soupiness, if that’s a word. The other changes were to add a little seasoning and just a small kick with Tabasco Sauce.

Six-Can Dump Soup
1 (15 oz) can mixed vegetables, undrained
1 (15 1/4 oz.) can whole kernel corn, drained
1 (15 oz.) can ready to serve Minestrone soup
1 (14 1/2 oz.) can diced tomatoes, with liquid
1 (15 oz) can black beans, drained and rinsed
8 oz can V-8 Vegetable Juice
Salt to taste
Pepper to taste
Tabasco Sauce, a few drops to taste
Open the cans of mixed vegetables, corn, Minestrone soup diced vegetables and black beans.
Dump the black beans into a strainer. Rinse well under cold water. Sit strainer over the empty can to continue to drain.

Dump the mixed vegetables into a pot. Drain the corn, dump into the pot with the mixed vegetables. Dump the Minestrone soup and the diced tomatoes into the pot.
Add beans to the pot.

Give everything a good stir.
Open the V-8, pour into the pot. Give everything a nice stir. Season with salt, pepper and a little Tabasco Sauce to taste.

Heat over medium heat until everything is nice and hot, about 10 to 15 minutes.

My mom makes something a bit like this that she calls Hamburger stew that starts with ground chuck, and fresh chopped potatoes, onions, and carrots cooked partially; then add what canned things you like, green beans, different canned beans like pork n beans and maybe white beans and black beans, canned corn, french green beans, chopped tomatoes, and you can use either V-8 or tomato juice or sauce, whichever your preference. Add other veggies to your liking to finish the pot and cook until fresh veggies are tender. Much quicker without the meat and fresh veggies though, for sure.

My mom made something similar with ground beef and whatever was on hand. Moms are great inventors aren’t they?
