Every year Hubby, Kiddo and I take the short drive over to a neighboring small town to attend their Chocolate Festival in the town square. There are more craft vendors than chocolate vendors, but still it’s a hoot. Plenty of goodies to sample and gadgets to buy. We love small town festivals and street fairs.
Last year Wing Stop had a booth, handing out free samples of their famous wings and a coupon for a discount on your next order. I’ve got to give them credit, the “samples” were five wings and a handful of fries. That’s not a sample, that’s a free lunch! I loved their Lemon-Pepper Wings. This recipe from Fleur Sweet Love on Allrecipes is awesome. One of the best copy-cat recipes I’ve ever tasted.
Wing Stopping Lemon-Pepper Chicken Wings
2 cups Peanut Oil, or as needed
4 tablespoons Olive Oil, extra virgin
2 tablespoons Lemon Pepper Seasoning
4 lbs Chicken Wings
Heat oil in a deep-fryer or large, deep skillet to 375 degrees.
In a large metal mixing bowl, stir olive oil with lemon pepper to create a coating for the fried wings.
Fry the chicken wings in batches in hot oil until no longer pink at the bone and the juices run clear. Remove using a spider ladle. An instant-read thermometer inserted near the bone should read 165 degrees when done.
Toss hot wings in the olive oil-lemon pepper mixture to coat.
Place in baskets lined with napkins or paper towels and enjoy!
