Orange-Citrus Margarita Bundt Cake

For Hubby’s birthday this year, we had the whole family over for an awesome smoked tri-tip barbecue. It was a chance for Hubby to strut his stuff with his new grill. Any excuse for a party, right? Had we gone with Mexican, I might have made a Margarita Bundt Birthday Cake. Somehow an Orange-Lime laced cake for dessert didn’t go with the rest of our meal. So we had the bundt cake leading up to his birthday, as a private celebration. For the family, I made Hubby’s favorite Birthday Cake, a marble cake with chocolate frosting.

One of the most popular desserts that I’ve made over the years are Margarita Cupcakes. Now those are boozy cupcakes! I was very excited to try an orange cake mix with Margarita makings in the mix. One of my favorite cakes is an orange cake, so already I knew this would be good. Boozy, but good.

Orange-Citrus Margarita Bundt Cake
Bundt Cake
1 (18.25 oz) box Orange Cake Mix
1 (3.4 oz) package instant Vanilla Pudding Mix
4 Eggs
1/2 cup Vegetable Oil
2/3 cup Water
1/4 cup Lemon Juice
1/4 cup Tequila
2 tablespoons Triple Sec Liqueur

To Make the Cake
Heat oven to 350 degrees. Grease and flour a 10-inch Bundt pan and set aside.

In a large bowl combine cake mix, pudding mix, eggs, oil, water, lemon juice, tequila and the triple sec. Beat for 2 minutes.

Pour batter into prepared bundt pan. Bake in the heated oven for 35 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Cool in pan for 10 minutes. While the cake is cooling, make the glaze.

Flip cake onto a rack, flip again so that cake is upright. Pour glaze over cake while still warm.

Tequila Glaze
2 cup Powdered Sugar
1 tablespoon Tequila
2 tablespoons Triple Sec Liqueur
2 tablespoons Lime Juice

To Glaze the Cake
In a small bowl, combine confectioners’ sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.

Drizzle glaze over the cake, allowing glaze to drip down the sides.

Garnish
2 Limes, sliced
1/2 cup Powdered Sugar

To Garnish the Cake
Slice one of limes in half, then into rounds. Slice the remaining lime into small sections. For added color, leave lime peel on the sliced limes. Decorate the top of the cake as desired with limes. Dust with powdered sugar.

Note: Since I had some limes on-hand and a big empty spot in the center of the bundt cake, I decided to fill it with limes just because. Cover the cake and hold at room temperature until ready to serve.
