It’s been a while since I have shared some quirky sandwich recipe. I don’t know about you, but on cold December days, the last thing I want for lunch is a cold sandwich. On the other hand, I don’t want a big burger either. While a cup of soup would be nice, a grilled sandwich sometimes really hits the spot.
Personally, I don’t find a fried bologna and grilled cheese sandwich all that quirky. Now a Scrambled Egg and Vienna Sausage Sandwich or a Bread And Butter Pickle Sandwich– those are some mighty quirky sandwiches. Delicious, but strange.
Have you ever fried bologna? It takes on a smokey, salty characteristic that isn’t there in a cold slice of bologna. And who doesn’t love grilled cheese? Put these two together, and we are talking warm childhood comfort food. Just you wait and see.
Grilled Bologna Pepper Jack Sandwich
Ingredients – Per Sandwich
2 All Beef Bologna Slices
1 Pepper Jack Cheese Slice
2 tablespoons Mayonnaise
2 slices Bread
Heat a small skillet over medium heat. Place one slice of bologna in the skillet. Top with a slice of cheese, then a second slice of bologna. Grill until the bologna begins to sizzle, about 3 minutes. Carefully flip and continue to grill until the cheese is melted.
Meanwhile, spread mayonnaise on the bread slices. When the bologna is ready, place on one slice of bread and top with the other. Toast lightly in the now empty skillet until warm.
Place on a plate, cut and enjoy a warm bologna-cheese sandwich.
Hot sandwiches are the best on cold days!
