Nearly all the television Hubby and I watch has been recorded for viewing when we want to watch. What an amazing concept! To have a life, a busy life and still watch all those Holiday Romance moves or football games or whatever. The convenience of play-back television is that you don’t need to watch the commercials unless you want to watch them.
Hubby and I kept skipping over the commercial for fish sandwiches served up at one of those fast-food chains. Even though you’ve skipped through the actual commercial, for just a split second there’s that image of a delicious fish sandwich. And during that split second, your brain registers a desire.
I was knee-deep in cookie dough when I realized I really didn’t want to stop and make dinner. It was Friday, and a fish sandwich with some fries sounded delicious. I could stop just long enough to wolf down a sandwich, then back to baking. I shot Hubby my request that he stop at a drive-thru for supper. Hubby happily agreed.
Do you know what is the biggest drawback to fast food take out? It’s not nearly as fresh or delicious or even all that hot by the time you sit down to eat. Let’s face it, while we all crave that fast-food flavor, it’s really not as convenient as it seems. Especially when making your own Filet of Fish Sandwich is so easy.
Filet of Fish Sandwich
8 teaspoons Dried Minced Onions
2 teaspoons hot Water
6 tablespoons Mayonnaise
2 tablespoons Miracle Whip
6 teaspoons Sweet Pickle Relish
Kosher Salt to taste
4 plain Hamburger Buns
Butter as needed
4 Fish Sandwich Filets such as Gortons
4 slices American Cheese
In a small bowl, re-hydrate the onion with a little hot water. Let sit for 5 minutes or so. Drain out any water that did not soak into the onion flakes. Add mayonnaise, Miracle White, Pickle Relish and stir to blend. Taste and adjust seasoning with a little salt if desired. Chill until ready to use.
Heat oven to 450 degrees. To give the sandwich a “fried” fish touch, lightly spray a rimmed baking sheet with cooking spray. Arrange fish on a rimmed baking sheet, then spray the fish with more cooking spray. Bake fish in the heated oven for 15 to 18 minutes, turning after 10 minutes.
While the fish is baking, brush the inside of the hamburger bun bottoms with a little soft butter. Lightly grill, then grill the faces of the top buns. Stack together and keep warm.
To assemble, place a slice of cheese on the bottom bun, top with the cooked fish fillet. Pile on the tarter sauce, then top with the top bun. Wrap each sandwich in a piece of foil, pop back into the oven for just a few minutes for the cheese to begin to melt.
Serve with fries and a triple-thick shake for that genuine Fast Food experience.
