National Sloppy Joe Day

National Sloppy Joe Day could not have come soon enough. All across American, parents are scrambling with what to do now that schools are closing. Have no fear, this is a great opportunity if you let it be.

Let’s start with World News. Children are hearing about some pretty scary stuff happening all around the world. So let’s make it a little less scary. Pick a country, learn about their people, their customs, their history. Let children see these places as global neighbors. You don’t have to leave your house, it’s all there on the internet. And it will make the world seem just a little less scary.

 

Our elderly. In many places visitation has been halted in nursing homes. Your children are great artists. Put those skills to work creating greeting cards for those who need human contact and a smile. It will make their day.

 

Teach life skills, like how to do the laundry or prepare a meal together.

These Sloppy Joes utilize ingredients you might have on hand right now. Okay, so maybe the buns aren’t something you keep in the cupboard. So improvise, make the Joes and serve it over spaghetti noodles. Sort of a twist on Cincinnati Chili.

Five Ingredient Sloppy Joes
3 lbs Ground Beef
3 cups Ketchup
2/3 cup Sweet Pickle Relish
1 envelope Onion Soup Mix
14 Sesame-Seed Hamburger Buns, split

In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, relish and soup mix; heat through.

Split open the hamburger buns, lightly toast if desired. Spoon Sloppy Joe on the bottom buns, top and serve with Oven French Fries or Tater Tots.

Note: Sloppy Joe filling can be stored in the freezer for up to 3 months. Serve some now, freeze the rest. Allow filling to cook, place in covered freezer safe containers. Thaw beef mixture in the refrigerator; place in a saucepan and heat through and serve as you normally would.
