A Simple Sandwich for a Simple Picnic

Every now and then, Hubby will stand in front of the refrigerator and “read” the bulletins. On the fridge I’ve posted two notices. The first is a menu plan for the week, the second are events scheduled in our area for the month.

The week’s menu also contains information such as It’s National Whatever Day or planned shopping trips. The Events show everything coming up that month, with details of times or other pertinent information. Knowing about events helps in the menu planning, and planning helps with everything.

As he stood there, reading the menu plan, he noticed I had planned what was clearly a picnic for an upcoming Saturday. Yet in the notation of daily activities there was no mention of a National Picnic Day or Eat Outside Today. So he asked, why the picnic?

Good grief! Did I need a reason? The weather has been so pleasant – not the scorching heat that we typically get this time of the year. A picnic along the river or maybe a hike in the foothills sounded lovely. And that was reason enough to plan Turkey Sandwiches, Cookies and Lemonade.

Once upon a time, when the children were little, we did picnics fairly regularly. There’s a lot of California History nearby. Gold Rush towns are fun to explore. And ever since we drove out to Wyoming, I’ve been craving sandwiches served roadside, like when I was a girl. Don’t ask me why, but a bologna sandwich and a bag of chips just tastes better at a roadside stop.

These sandwiches are super simple – like those of bygone days – with just the basics to satisfy that nostalgic craving. Simple things like picnics and walks in nature are the building blocks of fond memories. I know we went to Disneyland as children, but those aren’t the memories that I cherish most. It’s hiking at Indian Grinding Rock or exploring Malakoff Diggins State Park or even taking the back roads to the tiny hamlet of Washington, California that stand out.

So find out what’s in your back yard, pack a picnic and make some memories!

Texas Size Turkey Sandwiches
1 cup Lettuce, shredded
½ Red Onion, cut into slivers
8 slices Texas Toast Bread
8 tablespoons Miracle Whip
12 oz Deli Sliced Turkey
Black Pepper to taste

Stack lettuce leaves, shred and set aside. Cut onion in half from root to tip. Reserve half for another use, peel and thinly slice remaining half into slivers, set aside.

Lay bread out on a flat work surface. Spread about a tablespoon of Miracle Whip on each slice ob read. Divide turkey meat evenly among 4 slices of bread, season with black pepper. Top turkey with shredded lettuce and onion slivers. Close with remaining bread slice.

Cut each sandwich diagonally, wrap in plastic wrap, then in paper. Pack until ready to picnic.

Oh, and for the record, we had our picnic in our backyard. It was a beautiful day to spend puttering in the garden. After our stay-home picnic, Hubby and I played Backgammon while we chatted the night away. Couldn’t get any more romantic for a couple of old farts like us.
