While the recipe I have chosen to share today isn’t an Apple Turnover, it does involve Apple Pie Filling. One of my favorite things to get when we are at small town carnivals and street fairs are Funnel Cakes. Generally, Hubby and I will share a Funnel Cake as part of a junk food carnival extravaganza. Funnel Cakes are also awesome for Brunch. Especially a Funnel Cake topped with apple pie filling. It’s a dessert, a deep fried pastry and just fun on a plate. Happy 5th of July everyone. Apple Pie Funnel Cakes
1-1/4 cups Flour
2 tablespoons Sugar
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
1 large Egg
1 cup Milk
1-1/2 cups Apple Pie Filling
Vegetable Oil for frying
Powdered Sugar for dusting
Sift flour, sugar, baking powder and salt into a medium bowl. Make a well in the center of the flour mixture, set aside.
In a small bowl, beat egg. Add milk, mix well. Pour milk mixture into the well in the flour mixture. Stir with a wooden spoon until batter is smooth. Let rest for 15 minutes.



Dice apple pie filling into small pieces. Place in a saucepan and gently warm over low heat.

Heat vegetable oil in a large skillet to 325-degrees. Once the oil is hot, pour ½ cup of the cake patter into a funnel, holding finger over the spout. Drop batter in a swirling patter into the hot oil.

Fry cakes, turning once with a slotted spatula, until crisp and golden brown, about 4 minutes. Plate funnel cake, blot with a paper towel. Top each cake with some of the apple. Sprinkle with powdered sugar and serve warm.



Note: It’s best to make and serve one cake at a time as fresh from the fryer keeps the cakes crisp and lightly delicious.

When I was a child, our family visited the French Quarter of New Orleans. The funnel cakes were so good! The hot weather…not so much…story is always told that I looked up at my parents and asked “Are we having fun yet?” Thanks for sharing this recipe.
