It’s National Avocado Day!

Can you believe this? The last day in July! Summer is nearly over. In our neck of the woods, summer got a late start this year, but when summer arrived, it came with a vengeance! Thank goodness for AC, the cool coast for an escape and our at times rowdy community pool.

The heat has been hard on our garden, too. Some of the peppers were actually roasting on the plants! And my herb garden failed to thrive once the temperatures reached triple digits. July must also be Avocado Season. After all, today is National Avocado Day.

Hubby and I were amused to see the farmer’s markets all along the coast competing to see who could give away the most avocados. Some stands had signs the read 12 for a Dollar, others were a bit more stingy with only 7 or 8 for that price. Must have had a bumper crop. That’s fine by me. I love Avocado – the buttery fruit.

One of my favorite Room-service Sandwiches has to be an Avocado Turkey Bacon Sandwich. I don’t know why that is, I just really like them. Especially with a side of fries and a pitcher of Ice Tea. This seems to be the perfect way to end what has been a wonderful, although be it scorching month.

Happy Avocado Day!

Avocado Turkey Bacon Sandwich
4 slices Applewood Smoked Bacon
2 firm Roma Tomatoes, sliced
4 leaves Green Leaf Lettuce
1 Avocado, sliced
8 slices Sourdough Bread
2 tablespoons Butter
2 tablespoons Mayonnaise
4 slices Gruyere Cheese
12 oz Peppered or Smoked Turkey

Note: If you cannot find sliced Gruyere Cheese, buy in a small block and ask the deli counter to slice it. Turkey from the deli rather than pre-packaged is also best.

Cook bacon until crisp. Drain on paper towels, break in half and set aside. Wipe out skillet, set aside.

Slice tomatoes into rounds, set aside. Rinse and dry lettuce leaves, set aside. Pit avocado, slice thin and set aside.

Spread the butter over one side of each slice of bread. Grill until golden and crisp over medium heat.

Place bread on a cutting board, grilled side down. Spread mayonnaise on each slice of bread. On half the slices, layer a slice of cheese, a lettuce leaf, tow tomatoes slices and about 3 ounces of turkey, folded to fit neatly on the bread. Top with two halves of bacon and 4 slices of avocado. Top with remaining sourdough.

Give thanks to the Lord, for He is good
