Celebrate a Simple Servant of God

Today is not the Feast Day of Saint Teresa of Calcutta. Feast Days mark the anniversary of their death and entrance into Heaven. With the exception of John the Baptist, Nativities or birthdays of Saints are not celebrated. Yes, we celebrate the birth of Jesus. He is not a saint. He is our Lord and Savior, come down from Heaven to die for our sins.

Yes, we celebrate the Nativity of our Blessed Mother. She also is not referred to as a Saint, although if ever there were a saintly person, it would be the Mother of God. Therefore, John the Baptist is the only Saint that is honored and celebrated both on the day of his birth, but also the day of his death.

For me, I acknowledge the birth of Mother Teresa. She, and Saint John Paul II had an impact not only on the world, but in my life while they were living. Mother Teresa showed us that no sacrifice, however small, was not worth making. Pope John Paul taught us the importance of forgiveness and showed us how to die with dignity, always looking to the Lord. So forgive me if I wish a beautiful Servant of the Lord a most magnificent birthday in Heaven. Happy Birthday Mother Teresa. It’s nice to think of her sharing a slice of cake with Jesus and her friend, Pope John Paul.

Mother Teresa was filled with the Holy Spirit. Not only in the work she did here on earth, but in the words of inspiration she left us.

If you judge people, you have no time to love them.

We ourselves feel that what we are doing is just a drop in the ocean. But if the drop was not in the ocean, I think the ocean would be less because of just one missing drop.

Not all of us can do great things. We can do small things with great love.

Be the living expression of God’s kindness; kindness in your face, kindness in your eyes, kindness in your smile.

May we all strive to bring out the Mother Teresa within us. Happy Birthday to a humble servant of the Lord.


Street Style Cheese Quesadillas
2 cups Habanero Cheddar Cheese, grated
1 cup Pepper Jack Cheese, grated
3/4 cup Mexican Crumble Cheese, grated
Cooking Spray as needed
16 Street Size Corn Tortillas
Jalapeno Olive Oil
Parmesan Cheese (Green Can)

From a block of cheese, grate the Habanero, Pepper Jack and Mexican Crumble cheeses. Place in a mixing bowl, toss to combine well togeter. Set cheeses aside.

Warm a tortilla pan over medium-low heat. Spray with a little cooking spray. Spray each tortilla with a little cooking spray. Warm tortillas just until they soften and are pliable.

Fill one-half of each tortilla with the cheese blend. Fold tortilla over to encase the cheese, set aside.

When ready, brush tortilla pan with a little oil. Lightly “fry” Quesadillas until nicely browned on the outside, with melted cheese on the inside. Arrange on a platter, sprinkle with Parmesan Cheese to dust.

Serve plain or with Spicy Ranch Dipping Sauce.

Spicy Ranch Dipping Sauce
6 tablespoons Ranch Dressing
Hot Sauce or to taste

In a small bowl, mix together Ranch Dressing and hot sauce. Serve with Quesadillas and enjoy.

For a complete meal that is simple. Serve Street Quesadillas with Mexican Rice and Refried Beans.
