Take a Moment to Remember

It is with such mixed emotion that many of us look back on this day. Our innocence was forever changed. It wasn’t simply the impact September 11 had on Americans, it was a pain felt round the world.

The day of the attack changed the lives of those families left behind in ways none of us can imagine. It also changed our nation, some change for the better, some for the worst. Our Houses of Worship filled as we turned to God for answers. Some grab their guns, hearts hardened and filled with hate. It was not unlike Pearl Harbor and the country’s sentiment toward the Japanese. Sadly, for many, the need to seek God faded in time. For others, the hatred toward “non-Americans” or “non-Christian” only intensified. For them, I believe the bigotry always existed, and September 11 simply justified that hate. For those who briefly sought shelter in the Churches, such is often the case. When we are doing well, when life makes sense and we are content, we don’t think much about God. But when things go wrong, we seek Him out either to quiet our fears or to unleash our rage.

We should never forget what happened that day. Not as a source of hatred, but to realize the destructive powers of hate, the evils of hate. God did not create us to hate one another. He created us to love one another. To love one another as He so loved the world. Let us come together to remember, and to pray.

Heavenly Father, we pray:
In times of pain, give us comfort.
In times of despair, give us hope.
In times of hatred, pour out Your love.
In times of doubt, strengthen our faith.
Let us remember those who were called home
And those fractured who were left behind.
May Your peace mend their broken souls.
In Christ’s name, we pray.
Amen.

Today means many things – Patriot Day, National Day of Service and Remembrance – as a nation we will take a moment to remember, to feel that sorrow, and to look up with hope for tomorrow. I hope you have a blessed day. I hope the Lord brings you whatever you need at this moment. Peace be with us all.


Today is also National Hot Cross Buns Day. I will confess, Hot Cross Buns are not my favorite. Frittatas are. Even my husband, who will not eat an Omelette with cheese, will eat a Frittata with cheese. Go figure.

Ham and Baby Swiss Frittatas
Cooking Spray as needed
6 slices Baby Swiss Cheese, finely chopped
1/2 cup Cubed Ham, finely diced
8 Eggs
1/2 teaspoon Onion Powder
1/2 teaspoon Garlic Powder
1/4 teaspoon Black Pepper

Heat oven to 375-degrees. Spray a 12-cup muffin tin with cooking spray, set aside.

Finely dice cheese and ham. Toss together in a bowl to combine. Distribute the mixture evenly between each of the prepared muffin cups, set aside.

In a bowl, lightly beat eggs with a whisk. Season with onion powder, garlic powder and pepper. Ladle equally over the ham and cheese in the cups. Wipe away any spillage from around the edge of the muffin tin.

Bake in the heated oven until tops are a light golden brown and the eggs are fully set, about 18 minutes. Loosen by running a knife around the edge of the frittatas, lift with a spoon. Serve and enjoy.
