No Nachos Today

Would you believe that today is National Nachos Day? Here’s something even more shocking – we aren’t sharing Nachos today. I know, stunning, isn’t it?

Sometimes National Days are great for inspiring posts. And other times, they just seem to get in the way of what I want to share. Today is one such example. I want to tell you that I’ve made a discovery – a very easy, delicious discovery. But first we need to go back a little ways.

Every now and again, something will catch my eye when we’re out shopping for the week – something that might not fit into that week’s plans, but might later down the line. Our market was having an awesome deal on frozen Mexican foods. I don’t remember the exact details – might have been buy one get one free or some ridicules clearance deal. Anyway, I grabbed a few things and threw them into the cart. I’m a sucker for stocking up when there’s a deal to be had. It’s why we have a big sub-zero freezer in the garage.

Fast forward a bit – I was planning to make Tamales with a green enchilada sauce. But then last minute, I decided to make another sauce for the Tamales, leaving me with a big can of hot enchilada sauce to use another day.

Now we’re in the present. I’m standing in front of our freezer, door open, taking stock of what we have and what I might just be able to create without much fuss. That’s when I saw the box of Flour Taquitos. Chicken and Cheese – that just screamed Green Enchilada Sauce to me. Excitedly I jotted down a recipe utilizing both the Taquitos and the sauce.

Wow, this was better than excepted. My guys were thrilled, and I’m thrilled to share it here with you today. While I know Taquitos are a far cry from Nachos, it’s a Monday. In our house, Mondays typically are Mellow Mondays – a day to whip up something simple in the kitchen while recovering from a whirl-wind weekend. Happy Monday!

Chicken-Cheese Taquitos in a Green Enchilada Sauce
1 box (15 count) Chicken-Cheese Flour Taquitos
1 large can Hot Green Enchilada Sauce
1-1/2 cups Mexican Melting Cheese, shredded
Handful Nacho Jalapeno Peppers
1/2 cup Sour Cream, optional

Heat oven to 400-degrees. Spray a large casserole dish with cooking spray. Arrange Taquitos in the dish. Spray Taquitos lightly with cooking spray. Place in the heated oven to bake for about 10 minutes, just to crisp up a little.

Remove from oven, ladle Enchilada Sauce of the Taquitos. Scatter melting cheese over the sauce, top with sliced Jalapenos.

Return to the oven, bake for another 10 minutes or so, just until the cheese is melted, the sauce is bubbling and everything is heated through.

Remove from oven. Let cool for 5 minutes before serving. Garnish with sour cream if desired and enjoy. Great with refried beans and a pitcher of Margaritas.
