This the Second Day of Christmas

On the Second Day of Christmas, my true love gave to me, two turtle doves. The Old and the New Testament bound together are said to be turtle doves. Each of the twelve days of Christmas represent acts of faith in the perfect love story older than time itself.

There are those who believe there is a second hidden meaning of the two turtle doves. They represent the two natures of Christ. Jesus was God before He became man. Christ is fully God. When He became man, He was fully man, fully flesh, with all the experiences and sensations associated with the human nature of man. The doves could also represent our two natures – the physical and spiritual nature. It is this spiritual nature that was created in the image of God.

In addition to the Second Day of Christmas, today is also National Thank You Note Day. Once upon a time, writing elaborate, personal Thank You notes were the proper thing to do. Nothing was taken for granted, and expressing thanks was excepted. Today expressing thanks is a lost art. One that I personally would like to bring back. When writing those personalized Thank You notes, let’s not forget the greatest thank you of all, and that is to God. Did you wake up this morning? Then you have something to be thankful for. Amen.

On this, the second day of Christmas, with all the business of the season, a meal that is simple, quick and lip smacking good is definitely in order. From beginning to end, this spit-fire open-face sandwich can hit the table in under 30 minutes. Yeah, and it’s good eats!

Air-Fryer Tennessee Hot Chicken Tenders
1 (16 oz) bag Breaded Chicken Tender Strips
Cooking Spray
2/3 cup Franks Red Hot Pepper Sauce
1 stick (8 tablespoons) Butter
1 tablespoon White Vinegar
1/4 teaspoon Worcestershire Sauce
Bread for serving
Ranch Dressing for serving

Set air fryer to 400-degrees, cooking time 24 minutes. Let heat for 4 minutes, then spread chicken strips into the basket. Spray with cooking spray. Cook for 10 minutes, pause, turn, spray with more cooking spray, continue to cook another 10 minutes.

While the chicken strips air fry, make Tennessee Hot Sauce.

In a saucepan over medium heat, melt butter. Whisk in Red Hot Sauce, white vinegar and Worcestershire Sauce. Bring to a boil, reduce to a simmer and keep warm until ready to use.

Empty chicken strips into a large mixing bowl. Pour Hot Sauce over chicken, toss gently to coat. Transfer chicken strips to a serving platter. Serve on a slice of bread with a drizzle of Ranch Dressing. Don’t forget the fires!
