On The Fifth Day of Christmas

My True Love gave to me Five Golden Rings. Christians know these Five Golden Rings as the Pentateuch. Christ knew them as the first 5 books of the Torah. Both know the Five Golden Rings as Genesis, Exodus, Leviticus, Numbers, and Deuteronomy.

Genesis establishes the birth of the world from nothing and God’s covenant with His creation as well as man’s fall from grace. Exodus tells of the Israelites plight in bondage, their cries to God and His merciful answer. Leviticus establishes God’s laws beyond the ten commandments. These are necessary for God to once again dwell among His people.

Thus your are to be holy to Me, for I the Lord am holy; and I have set you apart from the peoples to be Mine. Leviticus 20:26

Numbers is the story of the 40 years spent wandering in the wilderness, of Israel’s repeated rebellion, and God’s repeated merciful discipline of His people. Finally, Deuteronomy brings the time in exile to an end. It is a fulfillment of God’s promises to Abraham in Genesis, His faithfulness to Israel in Exodus, His holiness in Leviticus and His punishment for disobedience in Numbers. Deuteronomy focuses on loving God and keeping His commandments. Five Golden Rings.


This year we find the 5th Day of Christmas to be a Friday. In keeping with traditions of old, a Fish Fry seemed the appropriate feast for today. And to represent golden rings, onion rings battered and fried to golden perfection. May you have a blessed 5th Day of Christmas.

Beer-Battered Fish
Golden Onion Rings

Beer-Batter Fish Fry with Spicy Green Chile Tartar Sauce
The Tartar Sauce
1 small Jalapeno Pepper
1 tablespoon Cilantro
1/4 Shallot
3/4 cup Mayonnaise
1 (4 oz) can Green Chilies
Cayenne Pepper to taste, optional

Stem and finely chop Jalapeno Pepper. Place Jalapeno in a small mixing bowl. Snip cilantro, add to the bowl. Mince about 1/4 of the shallot, add to the bowl.

Add mayonnaise and green chilies including juices. Stir to blend. Season with a little Cayenne Pepper for added heat if desired.

Cover and refrigerate the tartar sauce until ready to serve.

The Battered Fish
2 cups Buttermilk Pancake Mix (Bisquick)
1-1/2 teaspoons New Mexican Hot Chili Powder
1/2 teaspoon Kosher Salt
3/4 cup regular Beer
1 Egg
6 Tilapia Fillets
Vegetable Oil for frying
1 Lemon, quartered

In shallow dish or pie tin, place 1 cup of the Bisquick mix. Break up any lumps in the mix, set aside.

In medium bowl, beat remaining 1 cup Bisquick mix, the chili powder, salt, beer and egg with wire whisk until smooth

Place a wire rack over a baking pan or foil to catch the drips. Set up a batter station. Coat fish first in the dry mix to coat, then dip into the beer batter, allowing excess to drip back into the bowl. Lay fish on the rack to rest. Repeat until all the fish has been battered.

Heat about 1-1/2 inches of oil in a deep skillet over medium-high heat to about 350 degrees. Working in batches, fry fish for about 2 minutes on each side or until golden brown; drain on paper towels.

Arrange fried fish on a serving platter. Cut lemon into quarters, arrange around the fish. Serve with sauce and enjoy.


Golden Onion Rings with Dipping Sauce
Onion Rings
2 whole Vidalia Onions
2 cups Buttermilk
4 cups Vegetable Oil for frying

Trim ends from the onions. Peel and slice onions into rings. Break rings apart. place into a baking dish. Pour the buttermilk over the rings place in the refrigerator for 90 minutes.

While the onion rings marinate in buttermilk, make the dipping sauce.

Dipping Sauce
1/2 cup Mayonnaise
1/4 cup Ketchup
1 tablespoon Prepared Horseradish
1/2 teaspoon Smoked Paprika
1/4 teaspoon Worcestershire Sauce

In a mixing bowl, whisk Mayonnaise, ketchup, horseradish, paprika and Worcestershire Sauce. Taste, adjust as desired. Place mixture into a serving bowl.

Cover and refrigerate until ready to serve.

Beer Batter
1-1/2 cups Self-Rising Flour, divided
1 teaspoon Smoked Paprika
1/2 teaspoons Garlic Salt
1/2 teaspoons Onion Powder
1/4 teaspoons Cayenne Pepper
1/4 teaspoons Black Pepper
1-1/4 cups Beer

When ready, heat oil in a deep fryer or deep pot to 375-degrees.

Place 1/2 cup of flour in a mixing bowl. Remove onion rings from the buttermilk, shake off excess and toss with the flour to lightly coat.

In another bowl, combine the remaining 1 cup flour, paprika, garlic salt, onion powder, cayenne pepper, and black pepper. Stir to combine. Pour the beer into the mixture and whisk to combine. Dip each ring in the batter. Lift from the batter with a fork, let excess batter drip back into the bowl while allowing ring to remain coated. Carefully place onion rings in the oil.

Let fry for about 30 seconds, turn and continue to fry until golden brown. Remove rings from the oil, drain on paper towels. Serve with dipping sauce and enjoy.
