A Perfect Friday Morning Burrito

Would you believe that my house is still recovering from the Holidays? We don’t start taking the decorations down until after the Epiphany, January 6th. It’s just a tradition in my family. When you have 142 Santas, 73 Nutcrackers, 57 Snowmen, 18 Christmas Bears and 9 miscellaneous Christmas Characters, it takes a while to pack everything up.

With the exception of Kiddo’s bedroom, every corner of the house is decked out for the Holidays. Every year, I say two things. First, that I’m not going to buy another Santa, Nutcracker or what have you ever again, I have all that I need, and second that I don’t need to put them all out, we could rotate. Yeah, then I go to the Antique Shops and Street Fairs, find Character I cannot resist, and so much for the first promise. As for the second – who do I leave boxed up? Which Santa or Christmas Bear shouldn’t share the joy of Christmas, stuck in a box in the cold, dark garage. No, it never seems to work out. Kiddo and Hubby think I’m a little touched because I talk to the Christmas Clutter as though they were alive.

This year has been particularly slow at getting the house put back together. I wanted to take advantage of the blank slate after the holidays to change a few things. I wanted to put out more family pictures. I wanted to rearrange things and reorganize the house room by room. That takes time. I’m glad to say, the living room is nearly complete. I’ve even created a quite “prayer” corner.

Lately I find myself sitting in the midst of total chaos, enjoying a leisurely breakfast while trying new ideas. A bite of toast, a picture hung. A bit of egg, a table moved. Breakfast is important, or so I’ve been told. I know for me it is, but only because if I skip breakfast, my blood sugar tanks mid-day and I get into trouble. But if I eat mid-morning, things are fine. Besides, I like breakfast. I’d like to have breakfast for dinner. Especially scrambled eggs. With bacon or sausage. Just not on Fridays.

So I have to find different ways to satisfy that need for flavor without partaking in the forbidden meat. And fish for breakfast just doesn’t sound all that appealing – unless we’re talking Asparagus Crab Benedict. Yeah, that’s something reserved for special occasions.

One of the beauties of having a garden is that we have a freezer filled with home-grown peppers. Home-grown peppers are packed with flavor. A little egg, a little pepper, a warm tortilla and there you go. Breakfast to enjoy while wandering about redecorating the house.

Perfect Friday Morning Burritos
4 Flour Tortillas
Butter as needed
4 Mini Bell Peppers, any color
1/4 Red Onion
3 Spicy Peppers, any kind
8 Eggs
Salt to taste
Black Pepper to taste
1/4 cup shredded Mexican Cheese Blend

Warm tortillas in a skillet with a little butter, set aside and keep warm.

Core, seed and dice bell peppers. Chop onion, mince spicy peppers. In a skillet over medium heat, sauté vegetables until softened, about 3 minutes.

Remove skillet from heat. Add eggs, season with salt and pepper to taste. Sprinkle with shredded cheese. Return skillet to the heat, scramble eggs over medium-low heat until eggs are cooked through and the cheese has melted into the scrambled eggs.

Divide scrambled eggs among the tortillas. Roll burrito style. Heat a little oil in a tortilla pan. Grill burritos until golden on each side. Serve with Mexican Coffee

Vanilla Cinnamon Mexican Coffee
4 cups freshly brewed Coffee
Splash of Vanilla per cup
Pinch of Cinnamon per cup
Creamer as desired
Sugar or Sweetener as desired

Brew your favorite coffee as strong as you like it.

While the coffee brews, splash a little vanilla into each of four coffee cups. Sprinkle a little cinnamon into the cups. If using a powdered cream, add to the cups as usual along with any desired sweetener. If using a liquid creamer, add at the end.

Pour fresh, hot coffee into each cup. Stir and enjoy.
