Diced Ham Scramble with Buttery Texas Toast

Good Morning Sunday! I think my favorite day of the week has to be Sunday, for so many reasons. I love it when Hubby and I get up early together. It makes the day seem to linger just a bit. And Sundays should linger.

I love kneeling alongside Hubby during Communion. There is something about beginning our day with God that makes me feel almost invisible. That whatever happens, I am not alone. We draw our strength from our Heavenly Father.

Most of all, I love coming home from Mass, changing out of my Sunday Best and into a pair of comfortable jeans. Most Sundays I walk about the house barefooted. That’s the most comfortable way to be – completely casual.

Every Sunday begins with Mass. And most Sunday Masses are followed by a nice Sunday Breakfast. Sunday mornings might revolve around brunch or country skillets or even something as simple as this morning’s breakfast of scrambled eggs with toast. And my new all time favorite toast is Texas Toast – that really thick slice of bread usually reserved for the making of French Toast. It toasts up perfectly in the toaster. For mine, that’s a 1-minute setting, toast, flip over, and another minute. Perfect every time. Golden on the out side, soft on the inside, just waiting for some sweet butter and jam.

Diced Ham Scramble with Buttery Texas Toast
Diced Ham Scramble
1/2 Diced Ham
1 Green Onion
7 fresh Eggs
2 teaspoons Half-and-Half
1 tablespoon Butter
Salt to taste
Black Pepper to taste

If ham is not already diced, dice into small pieces and set aside. Trim root from the green onion; slice onion bulb and green tops, set aside.

Whisk eggs in a bowl until smooth. Add ham and the half-and-half, blend well. Melt butter in a skillet over medium-high heat. Once butter has melted, lower heat to medium and pour egg mixture into the skillet. Let eggs cook undisturbed until the eggs begin to set, about 2 or 3 minutes. Break up eggs, season with salt and pepper. As the eggs firm; add green onions and continue to scramble until cooked through, about 2 or 3 minutes longer.

Serve with Texas Toast and enjoy.

Butter Texas Toast
6 slices Texas Toast
3 tablespoons soft Butter
Jams, any flavor, as desired.

Heat oven to 300 degrees if necessary to hold toast until ready to serve.

Toast bread in a toaster for 1 minutes. Turn, toast another minute. Butter well, stak toast butter sides facing one another. Place on a plate and hold in the oven until ready to serve.

Serve with an assortment of jam selections.
