They call me mellow yellow. Great, now I’ve got Donovan singing in my head! Guess being a fan of the Hurdy Gurdy Man is letting my age show a bit. But not as much as his. Donovan released a new album last year, at the ripe old age of 76. Good for you!
What does that have to do with today’s post? Not much. Today is a Monday – or as I like to call them when planning our family’s meals Mellow Monday. That means make something we like, try a new recipe if you want, so long as it’s simple. In other words today is not the day to try Beef Wellington or whip up a soufflé. Although I will admit, soufflés are not that complicated. I’m just not that ambitious on Mondays. So just what do I have planned? How ‘bout burgers and fries? I do love to make my guys happy. And they do love a good burger with fries.
What’s that – you want something more? Okay the, we’ll finish off with something I hope will make us all a little mellow. Strawberry Tequila Milk Shakes. Yeah, you heard me right – Strawberry Tequila. You can blame my dear sister who went to heaven last October. She had come for a visit earlier, and gave me a bottle of Tequila Rose – a Strawberry Cream Liqueur made with tequila. So creamy, so dreamy. Definitely a girl’s drink. It’s even pink for goodness sake. We like putting a splash of booze in our milkshakes. And this liqueur just screams make me a milkshake. Unlike most of the recipes you’ll find online, ours in more ice cream than tequila.
Off to the kitchen we go . . .
Classic Grilled Onion Burger
Sweet Pickle Burger Sauce
1/2 cup Mayonnaise
4 tablespoons Ketchup
2 tablespoons Sweet Pickle Relish
1/2 teaspoon White Wine Vinegar
1 teaspoon Sugar
In a bowl, whisk together all the ingredients for the sauce. Cover and refrigerate until ready to use.
Grilled Burgers
1/2 Yellow Onion
1 tablespoons Bacon drippings
1 large Tomato
1/2 cup Iceberg Lettuce, shredded
3 (Third-Pound) Burger Patties
Salt to taste
Black Pepper to taste
Mesquite Seasoning to taste
3 Hamburger Buns
Sliced American Cheese, optional
Cut onion in half from root to tip. Reserve half for another purpose. Peel and slice remaining half into thin slivers. Stack lettuce, roll leaves tight and shred. Set aside.

Melt bacon drippings in a small skillet over medium heat. Fry onion slivers in the bacon grease until nicely browned. Remove from skillet, set aside until ready to use. While the onion slivers fry, slice the tomato and set aside.

Season burger patties with salt, pepper and Mesquite seasoning. Heat grill to medium-high. Grill burgers, lid closed, for about 5 or 6 minutes per side. If going with cheese burgers, add cheese at the last minute, turn off grill, close lid and let the cheese melt in the residual heat.
Split hamburger buns open. Brush cut side with Sweet Pickle Sauce. Scatter lettuce on the bottom bun, top with a burger, grilled onions then a slice of tomato and the top bun. Serve with fires and enjoy.





Air Fryer Crinkle Cut Fries
12 oz French Fries
Cooking Spray
Salt to taste
Heat Air Fryer to 390 degrees. Spray basket with cooking spray, spread out fries, then spray fries with cooking spray. Set timer for 10 minutes. After 5 minutes, shake basket, salt fries, then continue to cook for the remaining time.
Note: If fries are not brown and crisp enough for you, set Air Broiler for 2 minutes. Some brands do not brown and crisp as well as others.
Tequila Rose Strawberry Shakes
12 scoops Strawberry Ice Cream
3/4 cup Tequila Rose Strawberry Liqueur (more to taste)
1/2 cup Milk
Whipped Cream as desired
Strawberry Syrup to taste
Place four tall milkshake glasses into the freezer to chill.
In a blender, place 4 scoops of Ice Cream, the Tequila Rose and milk. Pulse to blend. Add remaining scoops of ice cream, give a few quick pluses. If the mixture is too thick, add a little milk to thin. If too thin, add more ice cream. If too weak, you can always add more Tequila Rose.
Pour mixture into well chilled glasses. Top with whipped cream and a drizzle of Strawberry Syrup. Serve, sip and enjoy.
