A Taco Filled Morning

Good Morning and welcome to a beautiful Wednesday morning. Before we get started today, I’d like to take a moment to wish my beautiful mother a Happy Heavenly Birthday. I know someday we’ll celebrate this day together. I love you, mom.


Today is also a Wednesday. Typically, on Wednesdays we’ll have something Mexican in the way of leftovers. Beefy Burritos or Enchiladas and such go into containers for lunches later in the week. But on those truly Taco Tuesdays, generally speaking there’s very little in the way of leftovers – maybe a half cup at the most of the spicy ground beef, if that. Certainly not enough for another meal. And just between us, I love that. You see it means that while my guys aren’t taking tacos as a leftover lunch, I get something spicy for breakfast. Yum! Now if only I could justify a Margarita in the morning. Do they make Tequila Mimosas?

Taco Omelette (per Omelette)
2 Eggs
Salt to taste
Black Pepper to taste
2 tablespoons Leftover Taco Filling
1 pat Butter
1 tablespoon Mexican Cheese Blend

Beat eggs well, season with salt and pepper to taste, set aside. Warm leftover taco filling in a small bowl in the microwave for about 15 to 20 seconds.

Note: I like to use a small food processor to really whip up the eggs.

Lightly oil an Omelette pan with just a touch of butter. Melt butter over medium-low heat. Pour eggs into the pan. Once the bottom of the eggs begin to set, push edge toward the center and allow uncooked egg to slice beneath. Continue to gently push the egg toward the center until the underside is set through.

Spread warmed taco filling over one side of the Omelette. Top filling with cheese. Fold egg over filling, slide out of the pan. Repeat as desired for each Omelette.

Taco Egg Burrito (per Burrito)
1 teaspoon Spicy Olive Oil
2 eggs
Salt to taste
Black Pepper to taste
2 tablespoons Taco Filling
1 tablespoon Mexican Cheese Blend
1 Flour Tortilla

In a small skillet over medium heat, warm the oil. Crack eggs into the skillet, season with salt and pepper. Let eggs cook until the whites begin to set. Crumble taco filling over the eggs, scramble together.

As the eggs cook, warm the tortilla and set on a plate. Once the eggs are fully cooked, remove skillet from heat. Sprinkle with cheese; allow residual heat from the pan to melt the cheese into the eggs. Fill tortilla, roll into a burrito, serve and enjoy

Note: Multiply ingredients for additional burritos.
