A Scrambled Good Morning

My favorite meal has to be breakfast. I don’t know why that is, but I love breakfast. The best part about going on vacation is that we get to eat breakfast together every day!

When it comes to scrambled eggs, you need to have an entire book of recipes. After all, eating the same scrambled eggs weekend in and weekend out would get to be old very quickly. Saturdays are the best day for scrambling eggs. They are quick, sometimes portable and depending upon what’s added, can be a light meal. This is espeically important on those weekends when I have something heavy planed for the evening meal.

Serving up Scrambled Eggs on a lazy Sunday isn’t bad either. Especially if Father Sam has precided over the morning Mass. His homilies tend to be a bit long winded. Sometimes after communion, he’ll close his eyes, so deep in prayer that he forgets he’s the one saying Mass. On Father Sam Sundays, it’s well into the morning before we’re home again. Then for sure it’s scrambled eggs to the rescue. But we don’t mind, when it comes to the faith, Father Sam is a man of passion, and it’s contagious.


These Bacon Bits Scrambled Eggs are amazing. Now I suppose we could have fried up a few strips of bacon, crumbled them and called that Bacon Bits. But the reality of “real” bacon vs. that stuff in the bag is twofold. For one, the stuff in the bag is saltier than real bacon. And softer, more chewy. The only way to get real bacon to be that chewy would be to undercook it, and the last thing I want is fatty undercook bacon in my eggs.

Bacon Bits Scrambled Eggs
1 Green Onion
8 Eggs
2 tablespoons Milk
Fresh Salt to taste
White Pepper to taste
2 tablespoons Butter
1/2 cup Bacon Bits

Slice green onion, set aside. Whisk eggs in a bowl with milk, salt and pepper, set aside.

Melt butter in a skillet over medium-low heat. Add eggs, leave undisturbed until eggs just begin to set around the edges, about 3 minutes or so.

Sprinkle bacon bits and green onions over the eggs. Gently scramble together with a large fork to fluff eggs as they scramble.

Serve with warm toast and jelly as desired.
