Good morning and welcome to the 11th day of July. Time is flying by so quickly. Today is the Feast Day of Saint Benedict, Abbot. Every day within the Catholic Church is a feast day. Like so many saints of old, little is knows about him beyond the establishment of the great order which bears his name.
Today is also Mojito Cocktail Day and Blueberry Muffin Day. I don’t know about you, but I think 5 am is a little early to talk cocktails. Besides, my favorite muffin hands down is blueberry, with a Buttermilk Spice as a close second. I think the reason I like blueberry best is because when I get to craving a muffin, blueberry muffins are easy to find. Look in any bakery or grocery market, and you’ll find blueberry muffins.
Better still, bake them yourself. Muffins are so easy to make. And they always taste like morning sunsine. Have a blessed and beautiful day!
Blueberry Streusel Muffins
Muffins
1/2 cup Butter, softened
3/4 cup Sugar
2 Eggs
1 teaspoon Vanilla
2 cups Flour
2 teaspoons Baking Powder
1/2 teaspoon Salt
1/2 cup Milk
1-1/2 cups Blueberries
Heat oven to 375 degrees. Line muffin tin with paper liners. Set tin aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.




In a separate bowl, sift together flour, baking powder, and salt. Stir the flour mixture into egg mixture; alternately with milk.
Gently fold blueberries into the muffin batter. Spoon the batter into prepared muffin tins. Set aside.





Streusel
2 tablespoons Flour
2 tablespoons Brown Sugar
1/4 teaspoon Cinnamon
2 tablespoons Butter, chilled
In a small bowl, mix together the flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle Streusel topping over the unbaked muffins.




Bake in the heated oven for 25 minutes or until a tester inserted into the center of a muffin comes out clean of batter. These muffins are delicious all on their own or with a pat of sweet, creamy butter.
