Celebrating American Family Day

Today is the 18th Sunday in Ordinary Times. There’s nothing ordinary about today and nothing typical about my American Family.

The featured photo was taken a long, long time ago. Some of the beautiful faces I see looking back at me are no longer with us. And that’s always sad. Captured in photographs are my idea of family. As you can see, ours is very mixed indeed. We come from all walks of life. When people accuse me of being privileged because I’m white, I ask them if they have met my family. Not your typical WASP genes in the entire bunch. But one thing is certain, we are all Americans.

Hubby had no idea what he had gotten himself into nearly 40 years ago when, like a couple of crazy teenagers, we married after a Five-Day Courtship. My family is diversed, a bit off and could benefit emencly from a stay in a padded room. But one thing is certain, I gotta love my family – however wacky they may be. And they love me back, no matter what.

Why not celebrate Family with a Sunday Picnic? So change out of those Church Clothes, pack up the family wagon and head out to the nearest picnic ground. Throw around a ball, float down river in a raft – whatever else just be together. And enjoy!

Picnic Sub Sandwiches with Italian Pickled Peppers
4 soft Sub Sandwich Rolls
1/2 cup Italian Salad Dressing
Romaine Lettuce Leaves
1 large Beefsteak Tomato
1/4 Red Onion, thinly sliced
6 oz thinly sliced Deli Genoa Salami
6 oz Mortadella sliced
16 thin slices Cheddar Cheese
1/4 cup Pickled Italian Banana Pepper Rings

Split sub rolls open. Brush inside of each roll with salad dressing, set aside. Tear lettuce leaves from thicker rib. Thinly slice tomato and red onion, set aside.

Layer lettuce, tomato, salami, Mortadella and cheese on the bottom half of each roll. Scatter pickled Banana Rings over the top of the cheese.

Close sandwiches, secure with cocktail skewers and cut in half to serve. Great with a nice Macaroni Salad.
