Gotta Love That Bacon

Don’t you just love it when a day give you inspiration? I look for inspiration from the moment I open my eyes. Each morning, I like to begin my day with the Sign of the Cross and Holy Water. Then I ask God for just three things. Protect me from Evil. Let me always do Your Will. And inspire me, so that I might inspire others.

Today is Bacon Lovers Day. Now I must confess, it really didn’t take any divine inspiration to come up with a yummy recipe utilizing bacon. I mean, bacon recipes partially write themselves. For the longest time, onion hamburger buns were missing from the grocery shelves. I don’t know what the pandemic of 2020 had to do with Onion Buns, but they seemed to disappear around that same time. I’m so glad these favorites have resurfaced again. Toasted onions on the top of your bun just gives burgers that extra something.

Lately I’ve taken to making double patties. Two quarter pound patties cook up in nothing flat, and when stacked together you have the most amazing half-pound burger. This time around I split a pound of ground beef into 6 patties. Together we had third-pound burgers, which was plenty big enough. Especially when topped with bacon and grilled onions. Yum! Kiddo was in seventh heaven, no doubt. Hubby isn’t a bacon-burger fan. Don’t know why, he just isn’t. The man doesn’t know what he’s missing sometimes.

When you’ve got double patties, grilled onions and crisp bacon, the lettuce, tomato and cheese is just all added window dressing. And let’s face it, most of us love a pretty window.

Classic Bacon-Onion Burgers
1 lb Ground Beef
Salt to taste
Black Pepper to taste
1/2 Yellow Onion
1 large Tomato
3 Green Leaf Lettuce Leaves
6 strips Bacon
3 Onion Burger Buns
Ketchup as desired
Mustard as desired

Note: Cheese is optional. Monterey Jack, Pepper Jack or a nice sharp chedder are all delicious choices.

Season ground beef with salt and pepper. Shape into 6 hamburger patties. Set aside. Cut onion in half from root to tip Reserve half for another purpose. Dice remaining half, set aside. Slice tomato. Rinse lettuce leaves and pat dry. Set aside until ready to use.

Fry bacon until crisp. Drain bacon on paper towels, break in half. Keep bacon warm until ready to use. In the now empty skillet, fry up diced onions. Drain on paper towels.

Heat griddle to medium-high heat. Add burger patties, grill for 3 minutes per side. Remove burgers, wrap in foil to keep warm. Wipe down griddle, toast buns.

To assemble: Spread ketchup and/or mustard as desired on toasted side of buns. Place 1 lettuce leaf and 1 slice of tomato on each bottom bun. Top each with one burger, 2 pieces of bacon and some of the onion. Place second burger over the onion, then top with remaining bacon and onion. Place top bun to close and enjoy.
