Today is Senior Citizens Day. It is a day set aside to remember the achievements of the more mature among our nation’s citizens. Whenever I see an announcement in the church bulletin about services for seniors, I suggest to Hubby we volunteer to help out. He then reminds me we are the seniors.
By 2060; long after I’ve gone home, seniors living in the US will reach 92 million. Can you imagine? Today seniors are said to have a wealth of knowledge and experiences that the next generation might benefit from. We are the folks who have stood witness to the technological advancements of modern life. We are the ones who can recall life before technology. We know first hand the benefits and drawbacks of our modern society. The greatest benefit is socialization. I have become reconnected with many of my childhood friends. The miles between us are no longer an obstacle. The greatest drawback is socialization. People no longer meet face to face. We don’t even speak to each other on the telephone anymore. Phones are for texting and selfies. Social media is the classic double edge sword.
I love that my childhood friends are but a click away. I hate that people have lost the ability to relate to one another face to face. My childhood is gone, and the magic of that simple, innocent time is also gone. Here’s to our seniors – may their memories never fade away!
Grilled Greek Chicken
1/2 cup Olive Oil
2 Lemons
3 Garlic Cloves
1 tablespoon fresh Rosemary
1 tablespoon fresh Thyme Leaves
1 tablespoon fresh Oregano
Salt to taste
1 (4 lb) Chicken Roaster
Measure oil into a 1-cup glass measuring cup. Slice lemons, juice into olive oil. Set aside.

Peel and mince garlic. Strip Rosemary needles from springs, mince. Strip thyme and oregano from springs, mince. Add garlic and fresh herbs to the oil mixture. Season to taste with salt, set aside.

To cut chicken into serving pieces, first remove back bone and wings. Split thighs from legs, split breast, then cut each half in half again to approximate the size of the thighs for more even cooking time. Place all the chicken pieces into a marinating dish.

Whisk olive oil mixture, pour over the chicken. Turn chicken pieces several times to coat. Cover and refrigerate for 8 hours, turning occasionally.

Prepare an outdoor grill for high heat and lightly oil the grate.
Arrange chicken pieces on the grill beginning with the legs, then thighs, then breasts, discard the marinade. Grill chicken until the meat is no longer pink. Turn as necessary to prevent burning. Depending upon size, chicken should take about 15 to 20 minutes to grill.


Transfer grilled chicken to a serving platter. Delicious served with Rice Pilaf and a simple Toss Salad for the perfect summer’s evening meal.

Thank you. The grill is massive – has a smoker, charcoal & gas options along with a side burner. It was a Father’s Day gift Hubby – our master griller.

I worked at the Boise City Senior Center for 7 years than the pandemic hit. They are a lot of fun to work with.
