Today is National Ride Like the Wind Day. It also happens to be my 38th Wedding Anniversary. While I’ve never actually jumped from a plane, I would compare it to our marriage. Jumping from a plane requires a great deal of trust as you step into the unknown. So does marriage.
Everyone has their love story. This is ours in cliffnotes. Hubby and I met when he hired me for a position at his office. We worked in the same shared space for 3 weeks, all business. On Monday of the 4th week, we met for drinks after work to get to know one another better. For us, it was the beginning of life of togetherness. On Saturday of that same week, just five-days later, we were married. If that’s not like jumping from a plane into the unknown, I don’t know what else would be.
We were married in jeans and t-shirts. We exchanged vows again on our 10th Anniversary while sailing to Alaska. Both our first and second weddings were without friends and family to share in our joy. So finally, on our 15th Anniversary we exchanged vows once again in the presence of 300 witnesses. I would like to marry this man all over again in a couple of years to celebrate 40 years together. He is my soulmate, my partner in faith.



For this year’s celebration, I am serving up one of Hubby’s favorites – BLT. Okay, I actually made this earlier in the week since our Anniversary fell on a Friday. But I can share it with you today. Hubby’s a Mid-Westerner all the way – likes meat and potatoes and comfort foods. He’ll go to the fancy places because he knows I love china and crystal and crisp linens, but he’d rather have a brick oven pizza than Filet Mignon. And that’s really what a solid marriage is all about, knowing what the other wants and putting that first. Do I like fancy things? Sure, but not as much as I love holding his hand in mine and seeing his smile. There’s only one thing I love more than Hubby, and that’s Jesus Christ. My love for Christ only makes my love for Hubby grow deeper every day.

Double Decker BLT on Toasted Italian Bread
18 thick sliced Bacon
9 sliced Italian Bread
1 large Tomato
6 Lettuce Leaves
6 tablespoons Mayonnaise
Slice tomato into 6 nice round slices. Wash lettuce, pat dry and set aside.

Heat a griddle to medium heat. Fry bacon until crisp. Drain on paper towels.



While the bacon is frying, toast the bread. With 6 slices of bread, lace 2 slices in each slot of the toaster so that the bread only toasts on 1 side. With the remaining 3 slices, toast as you normally would. These slices will be used for the center. Trim crusts form the center breads after toasting.

To Assemble: Spread mayonnaise on the un-toasted side of 3 slices of bread. Place lettuce, then tomato, then half of the bacon on each. Spread mayonnaise on the center bread, place on top with the mayo side down. Spread more mayonnaise on the upside, then lettuce, tomato and more bacon. Spread mayonnaise on un-toasted sides of the remaining bread. Place mayo side down to close the sandwiches. Hold together with cocktail skewers, slice sandwiches in half.





Awesome served with thick cut French Fries.
