Hubby and I feel blessed each Saturday morning as we shop for the week’s groceries. I’ve spend the days or weeks leading up to any shopping trip researching and refining recipes to test drive. Not once is it necessary to think cost.
While our disposable income has been impacted by the rising cost of necessities such as food, utilities and transportation, thus far we haven’t had to trim back on the basics. That’s a blessing. Week in and week out, we ask ourselves how can people manage? How does a single mom put food on the table? How does a young family manage to keep the lights on? Or fill up that tank with gas. We’ve notice people spending only a set amount at the pump rather than fill the tank. Turn on the evening news, and all you hear is how more and more American are going into debt because they can no longer make ends meet without relying on credit.
If you are blessed, then first thank the good Lord, then pass those blessings along to those in need. Now more than ever, local food banks are experiencing a rise in the families seeking help and a decline in donations. Our parish like many others around the country maintains a food pantry that relies on parishioner support. The Sunday Church bulletin contains a growing list of non-perishables items needed. If you can make a difference in the life of even a single person, stop the hunger of just one child, it makes life worthwhile. Blesses are meant to be paid forward. One day that kindness will come full circle. Praise be.
Tasty Tuna on Croissant Rolls
1/4 Red Onion
1 Celery Rib
3 tablespoons Sweet Pickle Relish
3 small cans Albacore Tuna
3 tablespoons Miracle Whip
3 tablespoons Mayonnaise
6 tablespoon Tartar Sauce
6 Croissant Rolls
1 large Tomato
6 Lettuce Leaves
Finely chop onion and celery, set aside. Slice tomato and tear lettuce to fit on rolls, set aside.

Drain tuna fish. Place in a mixing bowl, flake apart with a fork. Add onions, celery ad sweet pickle relish, mixt to blend. Add miracle whip and mayonnaise. If salad appears too dry, add equal amounts of miracle whip and mayonnaise, a half a tablespoon at a time until desired balance is reached.



Split rolls open. Spread a little tartar sauce on the cut sides of the rolls. Place lettuce leave on the bottom of each roll. Top with tuna salad and sliced tomatoes. Serve and enjoy.
