Have Supper with Guardian Angels

All you need do today is to turn on the news and the world seems to have lost sight of its humanity. Hate leads the way and clouds our minds. Now more than ever before, we need to seek out our protectors. Each of us, before we were even born, were given an angel of the Lord. Fear not.

Saint Bernard of Clairvau in the Sermon on Holy Guardian Angels said: “Why should we fear under such guardians? Those who keep us in all our ways can neither be overcome nor be deceived, mush less deceive. They are faithful; they are prudent; they are powerful; why do we tremble? Let us only follow them, let us remain close to them, and in the projection of the God of heaven let s abide.”

What is it that Saint Bernard is trying to get us to understand? It’s simple – Satan has his plans, but so does God. And God is more powerful. His angels are more powerful. Trust in God in all things. Call upon your angel with confidence. Bad things may still happen, but in the finality of this world, only goodness awaits us.

As children, we are often taught about the existence of Guardian Angels. As adults, we dismiss the idea as fairy tales. It’s sad the beauty that is lost from our sight when we choose to dismiss the views of childhood innocence. We say the magic we knew as a child is gone. What’s truly gone is that sense of God’s love carried to us on the wings of our angels. While we might not feel that love as we once did, it doesn’t mean God’s love is gone. He never leaves us. Sometimes we leave him. We are His prodigal children, and He is waiting always.

That I may aways and in everything
Surrender to Your will

Mesquite Barbecue Pork Loin
1-1/2 lbs Hormel Mesquite Barbecue Pork Tenderloin
Mesquite Seasoning to taste
1 up Chicken Stock
1 cup Barbecue Sauce

Heat oven to 3750-degrees. Line a rimmed baking pan with foil. Center a V-shaped wrack on the prepared pan.

Remove loin from the package. Place port n the roasting wrack, let any remaining marinade from the package drip over the meat. Season to taste with Mesquite Seasoning. Let rest on the counter for 15 minutes for more even roasting.

Place in the oven, let roast for 30 minutes. Increas temperature to 425-degrees. Pour chicken stock into the bottom of the roasting pan to create some steam. Pour barbecue sauce over the roast, brush to spread down sides and ends. Let roast another 10 to 15 minutes until barbecue sauce has glazed over the pork and the meat is cooked through.

Remove from oven. Let rest on a serving platter for 5 minutes, then slice. Drizzle with additional barbecue sauce just before serving if desired.

Country Skillet Mesquite Red Potatoes
6 medium Red Potatoes
1/4 Red Bell Pepper
1/2 Yellow Onion
1 tablespoon Olive Oil
Mesquite Seasoning to taste
Salt to taste
Black Pepper to taste
1 teaspoon Smoked Paprika

Wash potatoes. Cut into cubes and place in a saucepot. Add just enough water to cover the potatoes. Bring to a boil, let cook for about 6 minutes. Remove from heat, let potatoes steep in hot water another 6 minutes or until almost cooked through.

Drain well. Let potatoes air-dry. While the potatoes par-cook, core, seed and dice the bell pepper. Peel and dice the onion.

Heat a cast iron skillet over medium-high heat. Add oil to coat the bottom. Sauté bell peppers with onions until skins begin to blister. Season to taste with Mesquite Seasoning.

Spread potatoes over the vegetables, turning to combine. Spread out evenly in the skillet. Let cook undisturbed for about 8 minutes until a nice crust forms on the potatoes. Turn, season with salt, pepper and paprika for additional color. Let cook until nicely fried.

Keep warm until ready to serve. Serving from the skillet is a nice rustic presentation.

Buttery Canned Corn
1 can Sweet Corn
1 tablespoon Butter

Drain corn, rinse and drain again.

Place butter in a saucepan over medium heat. Let melt, add corn. Stir to blend butter over and around all the sweet corn. Gently warm.
