Simple is Simply Delicious

Recently when Hubby and I were shopping for the week, we needed to get some thinly sliced smoke turkey for a recipe. We stopped at the deli counter – $12.99 a pound – are you kidding me?

Granted, the nice people at the deli counter will slice your lunchmeat however you want it – anything from thick slice to paper thin. Still, that’s a lot of money to spend for a sandwich. So we checked the lunch meat section – Oscar Mayer and the other big name company that have it all nicely packaged for you. Wow – even more expense – almost 8 dollars for a half-pound. But then down at the bottom of the refrigerated section were those off-brand paper thin artificially smoked lunch meats. Perfect. Very thin, which is what I wanted. Very smoky in taste which meant the turkey could hold its own against the bacon, sun-dried mayo, Swiss and Arugula.

I know, you get what you pay for. I know the cheap brand isn’t the most wholesome, healthily selection. I would not recommend this on a regular basis, but every now and again, why not? Think of it like a rare trip to a fast food restaurant, only cheaper.

Of course, that’s entirely up to you. If you would rather spend the money on lunch meat than say a steak, that’s fine. As for me, I’d rather have a good steak any day.

Smoked Turkey Club Panini
6 slices Bacon
1/3 cup Sun-dried Tomatoes
1/2 cup Mayonnaise
8 slices Artisan Bread
Mayonnaise for the bread
8 thinly sliced Swiss Cheese
1/2 lb thinly sliced Smoked Turkey
Handful Arugula

Cut bacon strips in half, fry until crisp. Drain on paper towels and set aside. Rinse, pat dry and mince the sun-dried tomatoes. In a small bowl, whisk together the tomatoes with mayonnaise. Set aside.

Lightly spread plain mayonnaise over one side of each slice of bread. Lay bread, mayo-side-down on a cutting board. Spread each slice with some of the sun-dried tomato mayonnaise.

Layer bacon, turkey and cheese over 4 slices of bread. Top remaining bread with arugula. Place arugula topped bread over cheese topped bread, plain mayo side up.

Heat Panini press for 2 minutes. Place two or three sandwiches in the heated press, grill for about 5 minutes or until golden and the cheese has melted nicely. Repeat with any remaining sandwiches.

Serve with a house salad or a nice bowl of soup as desired.
