Wild Card Wednesdays are some of my most favorite days. It means at the dinner table anything goes – from Chinese Take Out Inspired to a hand-tossed pizza. It’s a time to try new things, experiment a bit, let my mood dictate the meal.
Recently one of those cooking videos popped up on my Face Book feed, and it reminded me of a childhood favorite. When I was a girl, mom made her spaghetti sauce completely from scratch. She started it in the morning and it simmered on the stovetop in a huge cast iron skillet all day. That night she cooked up pasta for the sauce, made a salad and warmed Italian dinner rolls. Dad doesn’t like the spaghetti noodles mixed into the sauce in a bowl and then served. He likes the two served separately, something I have never understood. I mean, what difference does it make? Anyway, after I mixed my noodles with the sauce, I would butter my roll. Then I’d fill the roll with spaghetti and eat it like a sandwich.
When Hubby and I first got married, I made a huge pot of spaghetti for the sole purpose of having left overs. Later in the week, I made Spaghetti Stuffed Rolls with the left-over spaghetti. He thought I was crazy until he tried it. This recipe is along the same lines. And surprisingly filling. My guys loved it. Hope you do, too.
Garlic Toast Meatball Sandwiches
1 (16 oz) bag frozen Mini-Italian Meatballs
1 jar Marinara Sauce
1 (8 count) box Texas Toast Garlic Bread
4 slices Monterey Jack Cheese
Heat oven to 375 degrees or according to Texas Toast directions.
Empty frozen meatballs into saucepan. Add Marinara Sauce. Over medium-high heat, bring to a boil, then lower heat to gently simmer for 20 minutes.

Arrange Texas Toast on a large baking sheet. Toast in heated oven for 6 minutes. Remove toast from the oven. Turn slices over. With the back of a spoon, create an indentation in the center of the toast, leaving edge raised. Place 3 or 4 meatballs with a little sauce into each indentation. Top with a half a sliced of cheese.




Return meatball toast to oven, continue to bake for 10 minutes or until cheese has melted.

Serve with a simple toss salad for a delicious yet casual supper.
