Today is the 6th Day of Christmas. In years gone by, we’ve celebrated the 12 Days of Christmas. Not this time around. Four years running is enough, don’t you agree? If you still need your 12-Day fix, check out postings from the past.
I don’t know about you, but to me 2025 sounds so very futuristic. Where are the flying cars? We nearly have a Rosie the Maid, right? So aren’t the cars next?
Looking out my window, it’s a gloomy day. The kind of day that makes me want to curl up with a good Hallmark mushy movie, a warm cup of apple cider and a blanket. Unfortunately, life doesn’t often work that way. Things to do – always things to do. I love taking care of my home, it’s the housework I hate. It’s a never ending cycle. Do laundry today, there’s more tomorrow. Wash the breakfast dishes and here come the lunch plates. Anyone who thinks for even a moment that a stay-home wife has it easy doesn’t understand there are no weekends off when it comes to running the home. No such thing as 9 to 5. But then again, there is no greater reward than hearing those magic words – “Thank you” from your family. One thing I have to give Kiddo credit for is that he never fails to say thank you when he comes to the dinner table. I’ve never told him to do that, he just does it. Just as he says I love you as he’s walking out the door each morning. It makes my day.
Enough of this – are you ready for the New Year? I have so many things on my “Wanna Do” list. I want to paint the kitchen a nice pale yellow to brighten the room. I want to change out the very dated cupboard knobs in the bathrooms. I want to paint the bird room (aka dining room) a pale green and do something about the windows in that room. I want to build new raised garden beds. I want to get bark for the front yard flower beds and plant some sort of ground covering to replace all that ivy. All spring project, for sure.
My New Year’s Resolution just might be to accomplish even half of the Wanna Do items on my list. What about you?
Pork Chops in a Cream Sauce
8 oz fresh White Mushrooms
3 tablespoons unsalted Butter
5 or 6 thin boneless Pork Chops
Salt to taste
Black Pepper to taste
3/4 cup White Wine
3/4 cup Heavy Cream
Note: The Cream Sauce is enough for up to 8 thin chops without making any changes. Cook what you need for the size of your family. Five was enough for us.
Clean and slice mushrooms, set aside.

Melt butter in a large skillet over medium heat. Season pork chops with salt and pepper, arrange in a single layer in the pan. Pan-fry chops for 2 minutes per side. Pour in wine, continue to cook chops for another 6 minutes.



Remove chops from the pan. Tent and keep warm.
Add cream to the now empty skillet. Add mushrooms, increase heat to high and cook for 5 minutes, stirring frequently. Let sauce reduce and thicken.



Arrange pork chops on a warm serving platter. Ladle creamy mushroom sauce over the chops, garnish with green onions if desired and serve.


Garlic Red Skin Mashed Potatoes
2 lbs Red Potatoes
3 Garlic Cloves
4 tablespoons unsalted Butter
1/2 cup Milk
Salt to taste
White Pepper to taste
Scrub potatoes, dice into half-inch chunks with skins on. Place potatoes in a large pot. Cover with an inch of water, lightly salt. Bring to a boil, cook until potatoes are tender, about 15 minutes. Drain well and set aside.
While the potatoes cook, mince the garlic. Set aside.
Once the potatoes are cooked and draining, melt the butter in the pot used to cook the potatoes. Add garlic and milk, heat until warm. Return potatoes to the pot, mash with a ricer until smooth. Season with salt and pepper. Transfer potatoes to a serving bowl and enjoy
Buttery Garlic Green Beans
1 can Green Beans
1 tablespoon Butter
1 Garlic Clove
Drain green beans, place in a sauce pan with butter. Peel garlic, press over the green beans.
Gently warm green beans over medium heat. Season with a little black pepper just before serving.
