When I was a girl, we ate a lot of spaghetti. Mom made the sauce from scratch and let it simmer all day in a big cast iron skillet.
There was usually a salad on the table and bread. Sometimes it was just sliced white bread with butter. Other times it was warm rolls. Bread and salads are great fillers for a growing family. My favorite thing to do on Spaghetti Night was to butter a warm roll, then stuff it with spaghetti. It was the best thing since – well since sliced bread.
I cannot tell you how many times I’ve cooked up a Spaghetti Supper only to have Hubby tease me. He’s been known to open the front door and shout to the whole neighborhood that dinner is ready.

I’ll put leftovers into Tupperware containers for lunches later in the week, or fill a gallon ziplock bag with spaghetti to keep on hand in the freezer for those days when I don’t feel like cooking or there’s so much else going on I don’t have time to cook.
But every now and again I like to make up a big pot of spaghetti just for the leftovers and the Spaghetti Sub Sandwiches. I’ve gotten 2 complete suppers plus a few warm lunches from 1 dish. Now that’s what I call stretching the food buget while taken my family down memory lane. What could be better?
Leftover Spaghetti Sub Sandwiches
2 cups Leftover Spaghetti
4 Steak Rolls
4 tablespoons Butter
2 Garlic Cloves
1 tablespoon Parsley Flakes
Parmesan Cheese, shredded as desired
Heat leftover spaghetti in the microwave or large pot until nicely warmed through, about 6 minutes.

While the spaghetti warms, split steak rolls, place on a baking sheet and set aside. Place soft butter into a small bowl. Peel garlic, press directly over the butter then add parsley flakes. Mash together with a fork. Spread garlic butter inside the steak rolls.

Heat broiler element of the oven. Place steak rolls under to broiler and lightly toast. (Remember, you are going to broil the rolls twice, so don’t let them get too browned the first time around.)

Remove rolls from oven, fill with warmed spaghetti. Sprinkle with Parmesan Cheese as desired. Return to broiler and continue to broil until the cheese has melted and the rolls are golden.

Serve with a nice toss salad for a simple supper the entire family will enjoy.
