Today is National Texas Day. My favorite state that I have never truly visited. It’s also Have Ice Cream for Breakfast Day. Hum, what to do.
So what will it be – eat Tex-Mex or have ice cream for breakfast? That’s a tough one, no doubt. As much as I would love to have Ice Cream for breakfast, February is far too cold for such nonsense. So Tex-Mex it is!
That said, be forewarned – you are gonna want that ice cream after these Fajitas. You could tone it down by using regular olive oil rather than my choice; Habanero-Tequila Olive Oil. Use to be I could only find my favorite flavored oils at Street Fairs. One local has managed to get their oils sold in the hardware store year round. Yah, it’s a strange place to shop for cooking oils, what can I say.
Sizzling Chicken Fajita
Chicken
2 large boneless Chicken Breasts
Salt to taste
Black Pepper to taste
Spicy Olive Oil as needed
1/2 cup Chicken Stock
2 tablespoons Taco Seasoning
1 teaspoon Chipotle Seasoning
Pinch Cayenne Pepper
Cut chicken into long strips. Season with salt and pepper, set aside. In a large skillet, stir fry chicken strips with a little spicy olive oil until nicely browned all over.


Mix chicken stock with taco seasoning, chipotle and cayenne pepper. Pour seasoned stock over the chicken. Bring to a boil, lower heat and simmer for 20 minutes, until chicken is tender and cooked through. Transfer chicken to a serving platter or large casserole dish, cover and keep warm until read to serve.

Fajita Vegetables
1 Yellow Onion
1/2 Red Onion
1 Yellow Bell Pepper
1 Red Bell Pepper
2 large Jalapeños Peppers
Spicy Olive Oil as needed
Peel onions, cut in half. Cut each half into long slivers. Stem, core and slice bells peppers. Stem jalapeño and slice into strips.
Heat a little spicy olive oil in a cast iron skillet. Grill vegetables until tender and slightly blistered. Keep warm until ready to serve.

Fajitas Finishing Touches
6 large Flour Tortillas
1/2 cup Sour Cream
Hot Sauce as desired
Spray tortillas light with cooking spray. Place in a resealable bag. Microwave for 30 seconds to soften.
Arrange meat and vegetables side by side on a serving platter or casserole dish.

Arrange warm tortillas around the rim of the platter or serve alongside the casserole dish with the finishing touches.

Place the platter in the center of the table so everyone can build their Fajitas just the way they like them. For a complete supper, some Spicy Rice and Refried Beans are perfect. And plenty of Margaritas.
