Today is a big day for the mattress, furniture and car industries. It’s Presidents Day – one of several three-day weekend when Americans are encouraged to buy new big ticket items. Yeah, it’s a strange American custom.
A much more meaningful way to celebrate the day is that it also happens to be Acts of Kindness Day. What a crazy world we live in that acts of kindness are celebrated as rare miracles rather than as natural as breathing. We should all strive to be kind every day. What a wonderful world we could create simply by showing kindless – and it’s free! Kindness is a smile, holding the door for the person behind us, letting someone else go first. Picking up something that a stranger dropped and returning it. Putting others first in simple ways. The rewards, the feeling we get from being kind is priceless. It’s a glow from within – and you know that God is smiling. How awesome is that!
This Tuna Casserole recipe reminded me of a simplier time. I’m not saying women shouldn’t want to have careers, but life was better when one income alone was enough. Today many of the women in the workforce are there to help make ends meet or are single parents barely scraping by. I grew up in a world that moms stayed home. The ones that did work outside the home had careers – teachers, doctors, nurses. It was just a different time. While we can’t turn back the clock, we can serve up a simple Tuna Casserole that is so reflective of Leave It to Beaver Days.
Campbell’s Mushroom Tuna Casserole
2 cups Medium Egg Noodles
1 tablespoon Butter
2 tablespoon Breadcrumbs
1 (16 oz) can Young Peas
2 (5 oz) cans Albacore Tuna
1 (10 oz) can condensed Cream of Mushroom Soup
1/2 cup Milk
Heat oven to 400-degrees. Lightly spray a large casserole dish with cooking spray, set aside.
Bring a large pot of salted water to a boil. Add pasta; cook al dente according to package directions. Drain well.
Melt butter, add bread crumbs to the butter. Stir to create a moist bread topping, set aside. Drain peas and tuna.
In the prepared casserole dish stir soup with milk. Add pasta, stir to coat. Add peas and tuna, gently mix again. Place casserole in the heated oven to bake for 20 minutes or until hot and bubbling. Sprinkle with the breadcrumb topping. Bake 5 minutes longer, until breadcrumbs are golden.




Remove from oven, let settle for 5 minutes before serving. For a simple yet beautiful supper, serve casserole with garlic toast and perhaps a simple salad.
