On This Beautiful Friday

Welcome to the last Friday of February. Not only is this the last Friday, but it’s also the end of the month. So this is our last chance in February to have an amazing Fish Supper. Enjoy!

I know, I’m usually a bit more chatty than this. What can I say except today I’ll let the photos speak for themselves.

Pan-Seared Tilapia
4 (4 oz) Tilapia Fillets
Salt to taste
Fresh Black Pepper to taste
2 tablespoons Butter
Fresh Thyme to taste
1/2 cup Flour
1 tablespoon Olive Oil
Lemon Juice to taste
Parsley Flakes

Rinse tilapia fillets under cold water; pat dry with paper towels. Season each fillet with salt and pepper to taste. Melt butter and pluck thyme leaves from springs. Set aside.

Place flour in a shallow dish or pie tin. Gently press each fillet into the flour to coat, shake off any excess.

Heat oil in a large skillet over medium-high heat. Cook tilapia in the hot oil about 4 minutes per side, until fish flakes easily with a fork.

Brush fillet with melted butter during the last minutes or so before removing fish from the skillet. Cut lemon in half, drizzle fillets with fresh juice. Garnish with parsley flakes and thyme just before serving.

Serve with Rice Pilaf and steamed green beans. Enjoy!
