The Simplicity of Ember Days

Today marks the first of three days once known as The Ember Days of Lent. While Ember Days with fasting traditions are no longer required and rarely observed, the meaning behind Ember Days still rings true.

What is the meaning? Simply put, to give thanks to the Lord our God for all His gifts. The sun rising in the morning is a gift. The sounds of birds singing is a gift. Just as the seasons and their harvest in due time are also gifts from our Father in Heaven.

Ember Days are three days each season that have been set aside to give thanks, to take stock of all we have and to praise the Lord with all our hearts. When we stop worring about material wealth and see riches as what is truly of value, happiness unlike any other is bound to follow. Take stock, look around. Are you loved? Do you love? Then you are far richer than you might realize. So rejoice and be glad.

Easy Vegetable Soup
10 small Red Potatoes
1 cup frozen Corn
2 cups frozen Peas and Carrots
1 can cut Green Beans
Salt to taste
Black Pepper to taste
1 can Diced Tomatoes
4 cups Chicken Stock
1 teaspoon Dried Thyme
Naan Bread for serving
Butter for serving

Scrub potatoes, cut in in half, quarters or eighths, depending upon size.

Place frozen corn, frozen mixed peas and carrots into a soup pot. Drain green beans, add to the pot. Add potatoes; season with salt and pepper. Finally add the diced tomatoes with their juices to the pot.

Stir to blend; add chicken stock and season with thyme. Bring soup to a boil; reduce heat to a slow steady simmer and cook until the potatoes are tender; about 30 minutes. Taste, adjust seasoning as desired.

Ladle into bowls serve with warm Naan Bread and butter.
