Welcome to National Something on a Stick Day. Immediately I thought of Corn Dogs. But today is also a Friday. And not just any Friday, but the 3rd Friday of Lent.
What could I make that is on a stick and in keeping with the Lenten obligation of abstinence? I am ashamed to admit it, but it did take a quick minute for the light to come on. Kabobs are on a stick. Shrimp are on the Lenten Menu. Yeah, that’s it – Shrimp Kabobs!
These Kabobs are so delicious and oh so pretty, I don’t need to ramble on – the pictures speak for themselves. So if you’re mouth is drooling and it’s shrimp on the barbie you’re craving, I say let’s get to grilling!
Garlic Shrimp Kabobs
3 Garlic Cloves
1/2 cup White Wine
1/2 cup Garlic Infused Olive Oil
1 teaspoon Kosher Salt
1/2 teaspoon White Pepper
1 lb large Shrimp (at least 16-20 count)
2 Yellow Squash
1/2 large Red Onion
1 pint Grape Tomatoes
2 Lemons
Peel garlic cloves, press in to a medium bowl. Add white wine, olive oil, salt and pepper. Whisk well and set aside.


Peel and devein shrimp, leaving tails intact for presentation. Add shrimp to the garlic marinade, toss to combine. Pour into a re-sealable bag, place in the refrigerator to marinate for 1 hour.


Soak bamboo skewers in water for 30 minutes while the shrimp marinates. Slice squash into rounds. Peel onion, cut into chunks. Set aside.
Heat one side of the grill to medium-high heat. Clean and oil grates.
Alternate threading shrimp, squash, onion and tomato onto each skewer; leaving ample room at either end for easy of handling. DO NOT OVER-CROWD so air can circulate for even grilling.

Note: If you have extra onions and squash like I did, sauté with a splash of olive oil, some dill seasoning and a little pepper.

Place the shrimp kabobs over indirect heat to grill. Grill shrimp for about 10 minutes or so, until pink and the vegetables are tender-crisp; turning occasionally.

While the kabobs grill, cut lemons into wedges for serving. Wrap in cheesecloth for a nice, “professional” touch.

When ready spread Rice Pilaf out on a large platter. Lay kabobs out on a large platter with lemon wedges as a garnish. Delicious with a pasta or rice side.
