Hello Saturday

Tomorrow we celebrate Divine Mercy Sunday, and the close of the Octave of Easter. That does not mean Easter is behind us for another year. Hardly, the Easter Season has barely begun. It just means that tomorrow is the final Eight Day Celebration.

Throughout the 40-Day Challenge during Lent on Hallow we have prayed “Lord, I believe. Help my unbelief.” Such a simple prayer, yet so very powerful. The Apostles sat at His feet. They listened to His teachings. They walked with Him and talked with Him in the flesh. Yet they themselves struggled with doubt and question and disbelief in His Resurrection. Thomas wanted proof. If they had doubts and struggles, imagine how much harder it is for us, so far removed from that first Easter Morning. Yet all we need to is seek Him, and ask that He help us to overcome fears, hesitations, moments of uncertainty. He is there, ready and able. All we need do is ask.


Once upon a time taking cross country crazy road trips were a thing we loved to do. While we still take the occasional road trip, they have changed. Generally speaking, we don’t try to drive half way across the country without stopping.

Back in the day, Hubby and I took turns driving. These days Hubby does all the driving, as I no longer drive. Something happened a while back, and now I get lost in my own neighborhood, so driving isn’t such a smart move. Back in the day, a break meant stopping long enough to gas up the car, use the restroom and ordering something to eat at the drive-thru window. Breakfast typically consisted of McDonald’s Sausage Biscuits, Hash Browns and a refill on the coffee. All things you can eat with one hand while driving with the other.

These days we take the time to stretch our legs, enjoying the choices found at a Mom-and-Pop Diner along the way. When you take the time to slow down, it’s amazing how the walk through life changes. There is a peace that God provides when you let Him in unlike any other. It’s often found in the smiling faces of strangers.

That doesn’t’ mean we don’t like Sausage Biscuits. We just don’t get them at the drive through. Besides, Fast Food at home is tastier and just all around more fun, don’t you think?

JD Sausage Biscuits Made Quick
1/2 lb Jimmy Dean Breakfast Sausage
6 frozen Pillsbury Southern Biscuits
6 Waxed Paper Squares
6 Baking Rings

Heat oven to 375-degrees.

Slice the sausage right in the package along the lines indicated to form patties. Lay out waxed paper squares, form each slice into a sausage patty. Set aside.

Spray the inside of 3-1/2 inch baking rings, arrange on a baking sheet, set aside.

Once the oven has reached temperature, place a frozen biscuit in the center of each ring. Place in the oven to bake for 18 to 20 minutes.

During the last 10 minutes of baking, place a little water in a skillet over medium heat. Add sausage patties. Cover and let steam for 8 minutes, turning half-way through. Drain off any water remaining. Increase heat, brown sausage uncovered for about a minute or so per side.

Split biscuits open, top with sausage. Eat now or wrap in foil and head out the door. Better than McDonalds any day.

Note: The beauty of frozen biscuits baked in a ring is that you can bake 1 biscuit or a dozen. All you need are enough baking rings. The rings help the biscuits to rise to new and beautiful heights.
