What’s In a Chip

No, not poker chips. It’s National Chocolate Chip Day – and yet we have no cookies! Yeah, I know it’s hard to believe.

What can I say except vanity got the better of me. Next month is my birthday – and it’s a big one. I’ve struggled with it, but lately I’ve almost come to terms with my age. There is nothing I can do to avoid turning 70. I am grateful to the Lord for allowing me this much time. Age really isn’t the proplem. The problem is, I don’t feel 70. I don’t know what 70 is suppose to feel like, but whatever it is, I’m not there. And there is more . . . Hubby wants to make a big production out of my birthday – get away to the wine country, a multi-course dinner while chipping through the vineyards aboard a vintage train, then a balloon ride above those very same vineyards to watch the sun rise. Lovely, I know. But here is where the vanity kicks in. There will be photographs taken to preserve my milestone birthday. I’d like to loose a few pounds between now and becoming officially older than dirt. If I were to bake a few dozen Chocolate Chip Cookies, between Hubby and I they would be gone in a day. We lack the discipline to limit ourselves to only a cookie a day. Now I realize there are fat-free or low cal versions of a Chocolate Chip Cookie, but what’s the fun in that? Really, if I am going to have a cookie, it better be packed with all sorts of unhealthy ingredients. That’s really the point of a cookie’s existence.

Oh, but Chocolate Chip Pancakes – now that’s a bit of indulgence I can handle. First off, it’s eaten in the morning. I don’t know about you, but after breakfast I have much to keep me occupied and moving – burning off those extra calories found in Chocolate Chips. Cookies, on the other hand are a reward at the end of the day with my feet up and a nice tall glass of milk for dunking. So pancakes it is for Chocolate Chip Day.

Chocolate Chip Bisquick Pancakes
2 cups Bisquick Mix
1 cup Milk
1 Egg
1 tablespoon Lemon Juice
1 tablespoon Sugar
1/2 cup Mini Chocolate Chips
Butter as desired
Syrup as desired

In the bowl of a stand mixer beat pancake mix, milk, eggs, lemon juice and sugar until just blended. With a soft spatula, fold in the chocolate chips by hand. Let the pancake batter rest for 15 minutes.

Heat a flat griddle to medium heat. Lightly brush griddle with butter. Ladle pancakes onto the warm griddle with a circular motion. Cook pancakes about 2 minutes, until air bubbles form and the edges are dry. Flip, continue to cook another minute or so.

Just before pulling pancakes from the griddle, top each cake with a pat of butter. Plate, serve with syrup as desired and enjoy.
