Nothing Like Summertime

Growing up summertime and camping went hand in hand. My Dad loved the outdoors and he loved to fish. Strangely enough, he didn’t like to eat fish.

When we went camping, Dad would put two mattresses in the back of the family station wagon. Back then, kids didn’t need seatbelts. So he’d pile us all in the back seat along with the family dogs. Atop of the mattresses was all the camping gear, including a tent. Dad would set up the tent and put one of the mattresses inside. That was for us kids. He and mom slept on the mattress in the back of the car. One of the things that I learned from him was how to prepare foods in advance for camping. When Hubby and I went camping (something we did more when we were first married) I made stews and spaghettis that were then bagged up and warmed in a pot on the camp stove. I cooked potatoes for breakfast at home, then fried them up in a skillet for breakfast. It just made life easier, with less packing necessary. No jars of spaghetti sauce or canned tomatoes or pastas not to mention all those seasonings!

Foil suppers are in keeping with that camping spirit. You could easily prepare a variety of foil meals, then simply heat on the camp grill when ready to serve. These packets would be awesome with kids – after all, who doesn’t want hot dogs?

Hope you are having an amazingly blessed summer! I’ll miss the beauty of Mammoth when we head east, but I am so looking forward to discovering new adventures that lay ahead.

Camp Out Hot Dog Supper
4 small Red Potatoes
4 small Yukon Potatoes
1/2 Yellow Onion
4 All-Beef Hot Dogs
1/2 cup Hickory Barbecue Sauce
Salt to taste
Black Pepper to taste

Scrub potatoes, place in a steamer basket of an Instant Pot. Place basket in the insert of the pot, add about a cup of water. Set PRESSURE COOK – CUSTOM – 3 MINUTES – HIGH. Press start. Once finished, let pressure release naturally.

Cut potatoes into quarters, Cut onion in half, reserve half for another purpose. Peel and cut remaining half into wedges, break apart. Cut hot dogs into bite-size pieces. Cut 3 heavy-duty sheets of foil about 20-inches square. Set aside.

Divide potato wedges among the pieces of foil. Divide hot dog pieces and onions, scatter of the potatoes. Drizzle with barbecue sauce. Fold the foil over several times to fully seal the foil packets with a little room for the steam to build up.

Note: At this point, you could pack the packages in a cooler to enjoy at a camp out later.

Heat an outdoor grill to medium heat. Place the packets on the hot grill, seam-side down to start, and cool for abut 5 or 6 minutes with the lid closed. Turn, continue to grill, covered, for another 6 minutes or until heated through.

Carefully open foil packages (grilling gloves help – the foil is HOT and the steam released even hotter). Empty contents onto individual plates. Drizzle with more barbecue sauce if desired, season with salt and pepper. Dig in and enjoy.
