It’s a Hump Day Wednesday. What could be better mid week than spending a little time at a bar? An ice cream bar, that is.
Today is actually Cheesecake Day. I love cheesecake – always have. My fondest cheesecake memory has to be eating at a very posh restaurant in San Francisco. We were the dining companions of my mother’s older sister and her husband, both prominent doctors with the United Nations. It was the first time I can remember crystal and linens on the tables. The entire wait staff was made up of men dressed in suits with bow ties. While we were looking over the menu (I should say my parents were looking over the menu) I saw a dessert cart wheeled to a nearby table. It held all sorts of wonderful pastries and several selections of cheesecake. I whispered to my mother that I wanted the cheesecakes. Uncle Bert scared me as a child. He was a large man with eyes that bugged out and a deep, gruff voice. I always whispered around him for fear he’d look in my direction. When it came time to order, Uncle Bert ordered for the entire table, instructing our waiter that I would begin with a slice of cheesecake, followed by a slice of cheesecake and for dessert the strawberry cheesecake. I was delighted, while my mother gave me one of those looks only a mother can.
Kiddo is also a fan of cheesecake, although not to the extent that I am. As for Hubby, he always encouraged me to order the cheesecake while dining out since we almost never have it at home. I did convince him once to try cheesecake. He wasn’t a fan, but I’d be willing to venture his mind was made up long before the fork crossed his lips.
One thing we can all agree upon is our love for ice cream. And what better way to celebrate the middle of the week than with a simple build it yourself Ice Cream Sundae Bar. It goes without saying, personalize your bar to the tastes of your family. Ours is hot fudge or caramel sauce. Hubby’s got the nuts, I’ve got the cherries. And Kiddo, he’s bound to pile it all on.
Vanilla Ice Cream Sundae Bar
1 cup Hot Fudge
1 cup Caramel Sauce
1 cup Crushed Nuts
3 Maraschino Cherries
3 tablespoons Chocolate Sprinkles
3 Waffle Cone Bowls
9 scoops Vanilla Bean Ice Cream
Whipped Cream as desired
Warm hot fudge and caramel sauce in their jars in the microwave according to directions. Place small ladles into the jars for serving. Place crushed nuts, cherries and sprinkles each in their own bowls with Demi-spoons and forks for serving. If possible arrange on a Lazy Susan or revolving platter with a can of Whipped Cream in the center surrounded by all the desired toppings.

Into each Waffle Cone Bowl place 3 generous scoops of ice cream. Finish Sundaes as desired, and enjoy.
