My youngest sister, Jaqs is the one to host most family functions. She has the larger house, and on those blistering summer days, she’s the one with a pool. Besides, we are the only out-of-towners. Everyone else lives no more than 20 minutes from her.
I bring all this up because one morning Hubby and I drove up to Jaqs to help set up for a party. While she is the hostess, I’m the one with an entire catering company in my house. Need platters? I have those. Cupcake stands and cake stands? Yup. Chafers – you bet. Food warmers and portable burners and roasting ovens? Got those, too. Then there’s dishes, flatware and glasses enough for 90 people without washing a plate. I just don’t have the sitting capacity for more than 20 guests these days. Can you tell, I love to entertain? Once upon a time; a lifetime ago, hosting 50 guests or more was considered a typical quiet evening at home.




As Hubby was bringing in serving platters and such, I was clearing off her kitchen island as a staging area. That’s when I saw a tray of Frittatas on the counter. I was surprised. So I asked Jaqs what Frittata recipe she had used. She squinted up her face and said “What?” I held up the plate of Frittatas. “These.” The lights came on – “Oh, you mean egg muffins.” Yeah, that’s what I meant.
While I’m a Frittata Gal, my sister’s family loves Egg Muffins. Whatever you want to call them, they are quick and oh so easy. Your entire breakfast needs baked up in one little muffin tin. All we need add is a good cup of Morning Joe.
Link Sausage and Green Onion Frittatas
4 frozen cooked Sausage Links
12 Eggs
2 Green Onions
1 teaspoon Salt
1/2 teaspoon Black Pepper
1 teaspoon Parsley Flakes
1/2 teaspoon Garlic Powder
1/4 teaspoon Red Pepper Flakes
1/2 cup Pepper Jack Cheese
Heat oven to 350-degrees. Line a 6 cup or 12 cup muffin tine with paper liners. (I went with 6).

Place frozen cooked sausage lings in the microwave. Warm for 60 seconds. Once warmed, place in a mini food processor. Pulse several times to grind into small pieces.


In a large bowl, whisk eggs. Trim and slice green onions, add to the eggs. Season with salt, pepper, parsley flakes, garlic powder and red pepper flakes. Fold minced sausage and cheese into the egg mixture. Carefully ladle the egg mixture evenly between lined muffin tins.





Bake in the heated oven until golden brown, about 20 minutes or so for jumbo, 12 minutes for regular muffins. Breakfast is now complete and ready to serve.
