Once upon a time my favorite thing to eat at McDonalds was from their breakfast menu. Hubby and I tend to not eat fast food all that often, except when traveling. It’s just a matter of convenience rather than a craving for a Big Mac.
When we traveled, I really liked the Biscuit and Sausage Sandwich from Micky-D. I grew up on good sausage patties and the best biscuits around. Dad made incredible biscuits. Me, not so much for the longest time. Now I can knock biscuits out of the park just like a Southerner, even if I do hail from California. These days I pass on the biscuits at McDonalds. I’m not sure who is in charge of baking their biscuits, but they are tiny and oh so dry. You need a gallon of coffee just to wash those hockey pucks down! Lord knows the last thing you want to do when traveling is to drink a lot of coffee. So I switched to the English Muffin breakfast instead. Even that is boring.
That’s when the lights came on. Instead of a thin ordinary sausage patty, why not use one with some heat? And instead of the typical round over-baked egg, why not try something a little different? Yeah, now we’re cooking with gas!
Speaking of Cooking with Gas – have you ever wondered about that saying? We know what it means – but where did it come from? Curiosity got the better of me, so I did a little research. Gas cookers began replacing the wood-burning stoves around 1915; and the actual phrase was used by a Hollywood radio comedian in December 1939. Gas companies liked that phrase and appropriated it to promote gas cooking from the 1940s onward. The creation of the phrase has been attributed to a man named Deke Houlgate, who quit the gas industry to become a writer for radio personality Bob Hope. Ain’t that something?
Okay, back on track – and spicing up our mornings once more! The recipe will make 4 spicy breakfast sandwiches. The photos are of three, since there are only three of us. You get the picture.
Spicy English Muffin Sandwiches
4 English Muffins
2 tablespoons Butter
8 oz spicy Breakfast Sausage
Water as needed
Cooking Spray as needed
4 large Eggs
Salt to taste
Black Pepper to taste
Guacamole as desired
Warm oven to 200-degrees. Place a rimmed baking sheet in the oven to keep warm.
Split English Muffins in half, toast lightly, then butter. Place muffins, still open, on the baking sheet and hold in the oven until ready to assemble

Divide breakfast sausage into 4 equal 2-ounce portions. Form portions into sausage patties just slightly larger than the English Muffins. Place patties in a skillet with a little water. First steam the patties, then once the water has evaporated over medium heat, brown the sausage. Top four split muffins with the sausage patties and hold in the warm oven.



Spray a small skillet with a little cooking spray. Working with one egg at a time, beat the egg well. (A small food processor makes quick work out of beating the egg well) Season with salt and pepper, then pour into the warm skillet. Swirl the skillet to coat the bottom of the pan as though making an omelette. Let the egg cook to set. Once set, fold in half, then half again and gently place the egg on top of one of sausage patties. Repeat until four patties halves have been topped with an egg.




To finish the sandwiches spread a dollop of Guacamole on the remaining muffins as desired. Close the sandwiches, serve and enjoy with a coup of coffee.

I confess to NOT being a fan of Mr McDonald though am not averse to McCafe coffee in extremis. However, I very much like your alternative breakfast suggestion.
