Here we are all together for Christmas Eve’s blessed morning. It’s always a quiet morning for us. All the secular activities of the season are behind us now. We can enjoy a simple breakfast, perhaps take a stroll, then have a quiet dinner before Midnight Mass.
Our parish puts on a concert before the Mass since people tend to arrive at least an hour or more ahead of the start of the Mass. At least that’s true for those of us who would prefer to start our Catholic Calisthenics from a seated position. We will rise at the start of the Mass, then spend the next hour standing, sitting, kneeling and bowing depending upon the obligation of worship at any given moment.
We are truly blessed in that some of the most amazing voices are a part of our Parish Choir. Angelic voices. Some songs are sung in Spanish, some in English or Latin. Last year it was a concert from around the world with twelve different languages.
Tonight (or rather in the morning) after Mass I will light the 5th Candle in the wreath, and give thanks to God. For now, I want to savor the stillness of this Christmas Eve morning with a delicious Waffle Breakfast. Perfect, since today is also National Eggnog Day.

Eggnog Waffles with Vermont Maple Sausage
Eggnog Waffles
2 cups Bisquick
1-1/3 cups Eggnog
1 Egg
2 tablespoons Vegetable Oil
Butter for serving
Syrup for serving
In the bowl of a stand mixer beat Bisquick mix, eggnog, egg and oil together just until mixed. DO NOT overwork the batter. Let rest for 10 minutes.
Heat oven to warm (about 300 degrees). Place baking rack inside a rimmed baking pan. Place in the oven to warm.
Heat waffle iron; grease with vegetable oil or shortening. Once iron is ready, pour batter onto center of hot waffle iron. Close lid of waffle iron. Bake about 5 minutes or until steaming stops. Carefully remove waffle.
Butter waffles as they come off the iron. Hold in the warm oven until ready to serve. Serve with syrup when ready to eat.

Vermont Maple Sausage
1 package Johnsonville Vermont Maple Sausage Links
4 tablespoons Water
Arrange sausage links in a skillet with a tight fitting lid. Add water, cover and cook on medium heat for 10 minutes. Remove lid, let brown, turning as needed Keep sausage warm until ready to serve.
