A Bootlegger’s Breakfast

Now I don’t know about you, but to me Eggnog is just an excuse to drink a little brandy. Either that or create some incredible breakfast dishes, with or without the brandy chaser.

Unfortunately, I am the only one in our house who happens to like Eggnog. To me, it’s the holidays in a cup. You know it’s Christmas when the grocery shelves start stocking the Eggnog. In our house we officially kick off the whole Preparing for Christ-Mas with an Eggnog laced breakfast on the first Sunday of Advent.

Not only have I shared with you my Eggnog French Toast, and Eggnog Waffles, I’ve even shared George Washington’s recipe for what has to be the booziest Eggnog ever. Not one, not two but three different hard liquors when into his recipe. While I know Eggnog might be hard to come by this late (or early) in the year, today is National Bootleggers Day. What better way to start the day than with Eggnog Pancakes. Yeah, I think I like these better than Buttermilk Pancakes.

Bisquick Eggnog Pancakes
2 cups Bisquick (or other Pancake Mix)
1 cup Eggnog (with or without the brandy)
1 Egg
1 tablespoon Vanilla
1 tablespoon Sugar
Butter as desired
Syrup as desired

Beat pancake mix, Eggnog, egg, vanilla and sugar in the bowl of a stand mixer until just blended. Let rest for 15 minutes

Heat griddle to medium heat. Lightly brush griddle with a little butter.

Ladle pancakes onto the griddle, cook about 2 minutes. Flip, continue to cook another minute or so. Spread butter over the pancakes while still on the griddle to help the butter melt into the pancakes. Hold in a warm oven until ready to serve.

Serve with your favorite Breakfast Meats such as bacon, sausage or Ham Steaks. Pour on the syrup and enjoy.
