Today as a Nation we honor Martin Luther King. Here was a man who brought about changes through his powerful words and dreams of a better place not just for black lives, but all lives. Segregation, bigotry and hate hurts everyone because it eats away at the spirit like a cancer. While the oppressed may outwardly suffer, the oppressor’s fate may lead to eternal damnation. Hate itself is not a bad thing. I hate to see animals suffering. I hate to see people hungry. Such injustices deserve both our anger and our hate. But to hate a person simply because they look different or think different. That’s just wrong. And that’s my lecture for today. After all, it’s only Monday. If we get all worked up now, this is going to be one very long week.
So let’s get on to the kitchen. At our local grocery store there’s a cart near the registers that is filled with “Manager’s Specials” – things that simply didn’t sell well when stocked on the shelves and offered at full price. It’s usually worth a dig through – you never know what you might find. That’s where I found the Spicy Louisiana Chicken Mix. Basically it’s flour with a bunch of seasonings to spice it up. Rather than follow the directions of the bag and get a single meal out of the mix, I thought I’d create my own beer batter using about a quarter of the mix. Yeah, smart move. As for the seasoning mix, it was marked down to a dollar. This supper was both thrifty and delicious.
Louisiana Spicy Chicken Fry Sandwiches
1/2 cup Mayonnaise
1 tablespoon Salt-Free Cajun Seasoning
2 drops Louisiana Hot Sauce or to taste
6 tablespoons Louisiana Spicy Chicken Batter Mix
1/2 cup Beer
2 large boneless Chicken Breasts
Oil for frying as needed
6 Sandwich Rolls
Green Leaf Lettuce as needed
In a small bowl combine mayonnaise with Cajun Seasoning and a few drops of hot sauce. Whisk to blend, refrigerate until ready to use.

In a mixing bowl mix Chicken Batter Mix with beer. Set aside. With a sharp filet knife, cut each chicken breast into 3 thin breasts lengthwise. Set aside.



Note: Breasts that are partially frozen will be easier to split into 3 thin breasts. Be sure to use a thin, sharp filet knife for best results.
Heat oil in a deep skillet to 350-degrees. While the oil is heating, dip chicken into the batter, allowing excess to drip back into the dish. Let rest on a wire rack.
Once the oil is hot, fry chicken in batches if necessary until cooked through, about 5 minutes or so, turning as needed for even frying. Remove from skillet, drain on paper towels and hold in a warm oven.



Split sandwich rolls open. Spread Cajun Mayo mixture inside the rolls. Place a lettuce leaf on the bottom, top with a chicken breast. Serve and enjoy.



Delicious with seasoned French Fries to serve as a hearty lunch or light dinner.
