Today is both National Cashew Day and National Espresso Day. That got me to thinking, why not have cashew cookies to go with my double shot of espresso? Okay, so a nice Biscotti with Chocolate and Pistachios might be better, but hey this isn’t Biscotti Day or Pistachio Day. So let’s work with what we’ve got here.

Hooray for National Macadamia Nut Day!
Botanically speaking, Macadamia nuts are not actually a nut. From a purely culinary perspective, the Macadamia is a nut. Visitors to Hawaii always bring back a box of Chocolate Covered Macadamia Nuts as gifts. You would think Macadamia trees were indigenous to Hawaii, but the truth is they hail from Australia.
