Orange Juice Day and Old-Style Waffles

Seems like all we talk about lately is this National Day or that National Day. Hey, to write over 3,100 posts I have to get my inspiration from somewhere. Do you realize I have not missed a day of sharing in over 3 years? Yeah, that does not mean I sit here every day writing something.

That’s the beauty of writing when you are on a roll, and taking time to still smell the roses or linger over a morning cup of Joe. There for a while, I had as much as three or four months written in advance, waiting to go “live” when the time came. Now it’s about three weeks or so. I pick a subject, do the research, then write the post for a future share. All I need are the photographs when the time comes. And since I cook nearly every day, it’s not like writing a cooking blog is an inconvenience. It’s just an expansion of what I’m doing anyway.

Besides, I think it’s better to think out loud on paper than it is to wander around the house mumbling to myself all the time. My friends and extended family live in other cities, with a vast majority in other states or even countries. Social media, and an occasional two hour phone call keeps me connected. I’ve had many of the same friends since elementary school. I’m often amazed when I realize how so many of us, as we ventured out into the world, became more and more grounded in our respective Christian Faiths. I’m not sure if that’s a comment on my generation, or if, as we get older, we get just a bit wiser. When you are young, you think you don’t need anyone or anything. You can conquer the world. But as you get older, you realize that the world’s treasures aren’t as valuable as you once thought.

Speaking of things that are old – today in National Orange Juice Day. Oh how I love freshly squeeze Orange Juice. And while it’s not that difficult to make, most of the time I’m just too darn lazy. Oh well. You know what goes good with Orange Juice? Breakfast. Did you know the word “breakfast” is actually two words? Break Fast. Interesting.

One of the things that I like to do is to read old cookbooks. I have some very old books. Some are fairly straight forward with just the recipes. Others are meant to give the little woman of the house some stern advice along with the how-tos of making the family meal. The recipe I’m sharing today came from my copy of a cook book published in 1908 by the Larkin Company of Buffalo, New York. In a addition to recipes, this little gem offers up advice you’d never hear today.

“One of the most important rooms in the home is the dining-room as it is the room in which the housekeeper and home-maker show their greatest skills. It is also the room from which the man of the house goes directly to his daily task, and the remembrance of a bright, attractive room, with a breakfast well cooked and properly served, will greatly relieve the pressure of his day.”

Here that, ladies. If he has a bad day, it’s all your fault. Yeah, right. I love reading old cook books if for nothing more than to realize just how far we have come from the dark ages. Still, the recipes are good, while the books themselves offer comic releaf.

Oh, and one more thing – thus far this is the best waffle recipe I have ever used. Just amazing.

1908 Old Style Waffles
3 cups Flour
1-1/2 teaspoonfuls Baking power
1/2 teaspoonful Salt
3 Eggs
1 tablespoon Butter, melted
2 cups Milk, warm

Sift flour with baking powder and salt into a mixing blow. Set aside.

Separate egg yolks from whites. Set yolks aside, beat whites to a stiff peak. Set aside. Melt butter in a small cup and warm milk gently on the stovetop.

Lightly beat egg yolks. Add melted butter slowly, whisking. Pour warmed milk into a bowl. Whisk in the buttery yolks. Gently fold in the stiff egg whites. Add the egg mixture to the flour mixture in 2 additions.

Grease a waffle iron. Fill with batter. Bake until a delicate brown. Remove to a hot dish. Serve hot with dusting of powdered sugar.
